A business founded by researchers at Kennesaw State University to improve the process of growing specialty mushrooms won the People’s Choice Award and finished among four finalists at the Ag Innovation Challenge sponsored by the American Farm Bureau Federation (AFBF).

In November, knee-deep in chilly water, Kennesaw State University graduate students Makayla Ferrari and Jordyn Upton waded into a culvert underneath Interstate 75 near Forsyth, Ga., carrying paper bags, a step ladder and a flashlight.

Demand for culinary mushrooms in Georgia and the wider region is far higher than supply, leaving both home cooks and chefs wanting. Mushroom-growing technology developed at Kennesaw State University could be poised to change that.
