They were delayed by the prolonged deep freeze the previous two weeks and now have a tight window to launch their season.

John Williams, executive director of the Ontario Maple Syrup Producers Association, said some producers in Eastern Ontario began tapping during a brief warm spell before the Polar Vortex descended.
Tapping under extreme cold is both hard on people doing the work and on trees because the inner bark can split and do harm to the tree and leak sap rather than feeding it into pipelines.

NEWFIELD, Maine One of the challenges Maine maple producers are facing in this mild weather pattern is deciding when to start tapping.
The weather is one of the drivers of that decision. If the month of January is seriously cold, it s an easy one; wait until mid-February.
It s been chilly lately, but not as cold as it often is this time of year. Producers look for a window that usually lasts about six to eight weeks, when morning low temperatures are below freezing but temperatures in the afternoon rise several degrees above freezing. That will get the sap flowing.
What would entice a law enforcement officer with no farming background to quit the force and start making maple syrup for a living? For Jack Powers, owner of Happy Jackâs Maple in Locke, New York, it was his children.
His first child, David, was born with Down syndrome. Powers immediately realized that when his son would look for a job down the road, he might have trouble finding a suitable position.
As daughters Brooke, now 8, and Julia, now 6, were added to the family, it became obvious that either Powers or his wife, Jennifer, should dedicate themselves to parenting at home to meet their childrenâs needs. Jennifer manages the virology lab at Cornell University.
