Lorraine Heskin, owner of Gourmet Food Parlour in Swords, has by her own account had a 'crazy year.' Having reopened her restaurants in Swords, Skerries and Malahide in June, she was forced to close them once again when Level 5 COVID-19 restrictions were implemented for a second time. Now, since restaurants and gastropubs were permitted to reopen on December 1, Lorraine finds herself back at the helm, determined to rise to the challenges of a business that has been forced to adapt to a global pandemic. Lorraine explains: 'It's been mental, it's been such a crazy year, I'm delighted that the restaurant is back open again, but it's been mad. It's been good, though, the restaurant is the heartbeat of our business so it was tough going with just a takeaway and 15 seats outside in winter time just wouldn't cut it. Trying to keep the business going has been very, very difficult, but we're delighted to be back open again so I'm just focusing on that.
