The Smokestack Diner says they will comply with new regulations published by the Governor’s office last week. Under those, restaurants now have four different open air seating floor plan options, one of which requires carbon dioxide monitoring. The local group We Will Whatcom has been advocating for restaurants in response to restrictions on them, and say restaurant owners should read carefully through the state updates and the interpretation and analysis by the Washington State Hospitality Association to decide if an establishment currently meets or can be modified to meet the definition of outdoor dining.
