Paula McIntyre's smoked Lough Neagh eel and Comber Early potato salad

Like the arrival of the first local strawberries, nothing says summer like a Comber Early potato. They’re in the shops now but make the most of them as the season is limited. They have PGI status, Protected Geographic Indicator, meaning that they are unique to the particular area in County Down that they come from. In France Champagne enjoys the same elevated status as does Parma ham in Italy. These unique potatoes benefit from sandy soil and sea salty air which helps to create the soft skinned, tender textured potato that requires no more adornment than a generous knob of butter or drizzle of vinaigrette.
