Restaurants that have had to be creative to stay in business during the pandemic still are finding challenges as options for dining out begin a slow return to normal. 
“We’ve struggled,” said Sal Vitale, manager at Leo’s Pizza. “We’ve picked up one or two employees, but we are actually three to four people short.”
