Patrick Clark, the former executive chef at Tavern on the Green in New York City, cooked a multicourse holiday meal at home that lives on, including Jerusalem-artichoke soup, a silky scallop chowder, roast turkey, braised greens with rutabagas, sweet potato and mushroom hash, and a peppery cider-glazed pork roast.
