It’s easy to see how Nikkei cuisine happened – dishes such as ceviche, Peru’s national dish, seem tailor-made for Japan’s sashimi tradition. Likewise, both cultures revere cooking over flames – whether it’s a robata, hibachi or parilla grill at play.
