According to a new study by scientists from Stanford University and the University of California, Berkeley, a global phase-out of animal agriculture combined with a worldwide switch to a plant-based diet would effectively halt the increase of atmospheric greenhouse gases for 30 years.
Although not visible to the naked eye, leafy greens can be observed with sophisticated hyperspectral imaging turning purple (different than purple varieties of some vegetables). This color shift was identified in cadmium-stressed kale and basil by Purdue researchers. Cadmium is a heavy metal that is hazardous to humans and animals.
Experts attribute the rise in cognitive decline to an aging population, as well as risk factors such as smoking, obesity, and high blood sugar.
