welcome back, everybody, to a very special edition of insomniac s kitchen. it s almost valentine s day, a lot of special dinners and what s better to end a good dinner with a great dessert. we re here at veritas restaurant, in the flat iron neighborhood of manhattan with pastry chef emily. thank you for doing this. we appreciate it. walk us through exactly what we ll be whipping up today. we ll do some chocolate-covered strawberries. that s an oldie, classic, but goody. absolutely. a sexy dessert and people love that. we have chocolate melting, 72% dark chocolate. i think the bitter sweet helps to bring out the sweetness of the strawberries. this is about two cups of chocolate. actually, you don t want to boil it. just nice and hot. once we have this completely melted, we ll add a little canola oil. go ahead and pour that in. ....
