Adding an indigenous twist to the Filipino favorite chop suey

When we think of a healthy dish that combines different kinds of vegetables, one recipe that comes to mind is chop suey. This stir-fried vegetable dish is a favorite among Filipinos because its ingredients can easily be replaced to fit the preference of the consumers or add a personal touch to this already distinct dish. 
Since April is known as Filipino Food Month, what better way to create a twist on chop suey than by using indigenous vegetables as ingredients? 
Maria Narcisa V. Garcia, an agriculturist from the Bureau of Plant Industry in Los Baños, Laguna, shares a recipe on how to make chop suey using native ingredients in celebration of Filipino Food Month in April.  ....

THE CULMINATING talk of Filipino Food Month, titled “The Endless Possibilities of Filipino Cuisine,” took the discussion beyond the table and into the fields of tourism and education.

BUTUAN CITY, May 4 The Department of Agriculture (DA) - Caraga conducted the Filipino Food Month culmination program highlighting the indigenous and local food source through a cooking competition.
The participants of the cooking competition hail from the Rural Improvement Clubs (RIC) of Barangays Bobon, Tiniwisan, and Taligaman in Butuan City. The competition was divided into three rounds wherein 30 minutes was allotted for the alimango or crabs as the main dish, 30 minutes for the mudfish, and 40 minutes for the native chicken.
Supervising Agriculturist of Agribusiness and Marketing Assistance Division (AMAD) Isabelita Ocampo stressed the importance of celebrating the Filipino culinary tradition notwithstanding the threat of the COVID-19 pandemic. ....

Three main ingredients
One does not need to spend a lot in making this dish as it can be created out of the materials that are grown in many local farms and are considered staples in most Filipino households. 
For tag-ilo or fermented fish, ingredients are one-fourth kilo of fish (either tilapia, dalag, hito, or any available fish), four cups of cooked rice, and four tablespoons of salt. While for balo-balo, ingredients are the same, except that shrimp is used instead of the usual tilapia fish. 
Patdu said in Tagalog, “The fresher [the seafood], the better. The smaller [the seafood], the better. This way, you won’t have to remove their heads.” As long as they are clean and fresh, any fish can be used.  ....

Moringa or malunggay has been a backyard garden staple in many Filipino homes because of its nutritional benefits and adaptability to local conditions. 
In celebration of Filipino Food Month this April, an online series of talks called the “Philippines on a Plate”, tackles different crops and dishes, including malunggay, to recognize the importance of local culinary heritage and how it shapes our identity as Filipinos.
One of the local malunggay industry leaders and resource person in the said event is Bernadette “Bernie” Estrella Arellano, founder and chairperson of Moringaling Philippines Foundation Inc.
