Anna Del Conte and Marcella Hazan are my go-to writers on Italian food, so when I was looking for a recipe for caponata, it was to these much-loved pages I took my well-worn thumbs. I had arrived back from Sicily, with salted capers in my suitcase, and I wanted to replicate this simple but beautiful dish we had eaten when we stayed on the coast in Siracusa. It was by no means the first time we’d had caponata, but it was special, waiting for us there with a few other homemade dishes, when we checked into our Airbnb. May 7, 2021 The debate to allow college-athletes in Texas to get paid for their own image and likeness is continuing in the State House. University of Texas Athletic Director Chris Del Conte says he supports the bill that would allow players to get paid. Del Conte claims it would help all Texas schools in recruiting student-athletes. Eight states have already passed similar bills, and 35 other states, including Texas, are considering the legislation. Those moments solidified Del Conte’s belief that the administration’s top choice was the best choice for the future of Longhorns basketball. A little farther west and a little while later, UTEP head coach Rodney Terry, the longtime assistant under Rick Barnes, heard the news of Beard’s decision and felt similarly to Del Conte, calling it a “home-run hire” and quickly coming to the belief that Beard’s “gonna blow it out of the water” in Austin, he said during a Zoom meeting with reporters on Wednesday. ....
