Detailed description is TR Restaurant & Bar, located north of the Ponquogue Bridge in Hampton Bays, is a year-round creative and classic “Hamptonian” seafood restaurant utilizing the freshest, high-quality ingredients from local fishermen and purveyors.
Chef Tom Rutyna will launch TR Restaurant & Bar, a brand new seafood restaurant located just north of the Ponquogue Bridge and behind Tully’s Seafood Market in Hampton Bays, in time for the 2011 season.
This year-round creative and classic “Hamptonian” seafood restaurant will utilize the freshest, high-quality ingredients from local fishermen and purveyors.

Noting Rutyna’s dedication to fresh fish, Joanne Starkey of The New York Times once said he “is at least as much a fisherman as he is a fine chef.” His late grandfather, Herman (Tick) Ullman, former Southampton town trustee, was the first to introduce Rutyna to local waters and fishing.
During his ten years as executive chef at Coast Grill in Southampton, owner Joe Luppi, who tested recipes for former New York Times’ critic Craig Claiborne and columnist Chef Pierre Franey, noted there is “very little that Rutyna doesn’t know about fish.” His knowledge of seafood is extreme and he follows his own motto, “I know what I know.
What I don’t, I’ll learn fast.” .

In addition to being chef and owner of TR Restaurant & Bar, Rutyna also wears the hat of restaurant designer.
He stripped the space, which previously occupied Before The Bridge Restaurant, refurbished the furniture and did all renovations himself to create a rustic, yet clean and streamlined look.
Windows line the dining room, which boasts bright white walls with black sconces and is complemented by a black chair rail with matching booths, tables, and benches.
The focal point in the bar is a large blue marlin, caught by Rutyna, gilded in silver and mounted to a blue-painted wall that brings out the fish’s piercing blue eyes.
Other unique aspects to the bar include a white pearl countertop and a hanging clam rake for glasses.
Additionally, TR Restaurant & Bar has two slips available to dock and dine with direct access to Shinnecock Bay.

Aiming to set the bar in the Hamptons by which to judge seafood, agriculture and wine, Rutyna offers a seafood menu full of creative dishes and refined old age classics.
Prices range from $9 to $15 for appetizers, $20 to $36 for entrées, and $8 to $12 for desserts.
