Have always been curious about the widely-raved porridge loaf and decided to give it a try! This version is a mix of The Bread Code's last sourdough recipe and The Perfect Loaf's take on tartine's porridge loaf, because:1. I am terribly afraid of high hydration recipes. Have had past experiences where i have broken down in tears after trying to slap and fold/ handling an

It's been a long time coming, but I finally got around to doing a side-by-side comparison of a bake with and without raisin yeast water. One caveat... any of you that have followed my posts may remember when my yeast water that I made with honey and raisins went sour and noticeably acetic. I thought it was the new batch of raisins I had purchased, but it happened again with a

And some fertilizer prices have more than doubled in the past year due to covid supply chain issues and several major storms and could get even worse now. food will be more expensive to grow, less of it on the global market and we will all end up paying for it. >> if the prices continue, youll see bread prices slightly higher, only about 10% of the cost of a loaf of bread is wheat. however, if you are buying flour off the shelf, all purpose, bread flour, likely to increase 25, 30%, if the prices...

If you don’t have a Detroit pizza pan (its deep sides and black anodized aluminum help achieve a crust that’s fluffy on the inside but crisp all around), that’s okay: Use a 13x9" baking pan or two 8x8" baking pans.

0 im not going to get into intelligence but the presidents intention of sending u.s. military to fight in ukraine against russia has not changed. >> even if there is a chemical weapons attack, the calculus will not change? i want to be clear what the response would be. >> we are conveying to all of you what the capabilities are. the steps they have taken in past. the president and our nato partners have not changed their assessment about their plans to send u.s. troops in. >> president biden let...

No secret I love barley flour in my bakes. It's just a flavor I enjoy. This bake is based on a recipe in The Finnish Cookbook by Beatrice Ojakangas. I converted from volume to weight as best I could and took a few liberties.1) I replace half the rye flour with rye chops2) I added a YW pre-ferment that incorporated all the rye flour and the other half of the barley flour3) I

This is a recipe in Hamelman's Bread (3rd Ed.). It was a straight forward bake and had a very nice sour apple aroma during the bake. Haven't had a chance to slice it yet, but will have some in the morning for breakfast. Recipe calls for Medium Rye, but says that Whole Rye can be substituted. I proofed this seem side down for the natural score look.Makes one loaf...Total
