Famed for its elaborate pancake dishes and frequent long lines of diners patiently waiting for weekend brunch, Griddlecakes replaced a former Einstein Bros. Bagels coffee shop at the intersection of Rainbow Boulevard and Flamingo Road, sharing the building with a drive-thru equipped Dairy Queen. In addition to the flavored pancake stacks that can be personally customized and upgraded with choices of fruit, cream, and drizzle, the lengthy breakfast menu is served all day and includes omelets, waffles, French toast, skillets, eggs Benedict, and scrambles, plus lunch specialties of sandwiches, wraps, salads, and eight-ounce burgers.
