SERVES
1 small onion, finely chopped
2 garlic cloves, finely chopped
100g broad beans, podded weight (use frozen if fresh are not available)
100g peas, podded weight (use frozen if fresh are not available)
1 courgette, finely diced
500ml vegetable stock, or as needed to cover
½ baby gem lettuce, cut into strips
A handful of mint, roughly chopped
METHOD
In a saucepan add the olive oil and gently heat.
Add the chopped onion and garlic and sauté for eight minutes until soft but not coloured.
Add the broad beans, peas and diced courgette and sauté for one minute. Then season.
