Niland and his creative wife Julie, who brought sexy back to seafood at fine diner Saint Peter and its cute cousin Fish Butchery, have snapped up the lease at 670 New South Head Road in Rose Bay. They'll open Charcoal Fish there in late June. Josh Niland told Good Food he's long dreamt of reinterpreting the charcoal chicken shops found on every street corner.
