Tim and Emily Lewis opened two new eateries in full COVID-19 dine-in ban mode. So they figured a month was ample time to relocate their established bakery, especially since such restrictions have all but been erased. But the Springfield couple behind Three Twigs Bakery & Bistro are finding government regulations aren’t the only hurdles to opening a business a year into the pandemic. The public will get its first taste of the bakery’s new home at 3429 Freedom Drive April 24 — two weeks later than the Lewise originally planned to begin dine-in services. And Emily is calling even that milestone more of a “celebration” than an actual opening.
