Tim and Emily Lewis opened two new eateries in full COVID-19 dine-in ban mode. So they figured a month was ample time to relocate their established bakery, especially since such restrictions have all but been erased.
But the Springfield couple behind Three Twigs Bakery & Bistro are finding government regulations aren’t the only hurdles to opening a business a year into the pandemic.
The public will get its first taste of the bakery’s new home at 3429 Freedom Drive April 24 two weeks later than the Lewise originally planned to begin dine-in services.
And Emily is calling even that milestone more of a “celebration” than an actual opening. ....

Springfield bakery and bistro delays opening of new site

The public opening of Three Twigs Bakery & Bistro in its new Parkway Pointe home has been pushed back.
Dining service and in-person sales at the new 3429 Freedom Drive address were expected to begin Saturday. However, owner/operator Emily Lewis said the public opening has been pushed back until late this month because of struggles finding additional staff.
The scratch-made bakery will continue to fill catering and advanced orders from the Parkway Pointe address, which it has done since March 22. Orders must be placed online at www.threetwigsbakery.com.
Pre-orders for whole cakes, as well as dozen and half-dozen bulk orders of cupcakes, doughnuts and cookies in regular or gluten-free/vegan varieties can be picked up from 9 a.m. to 2 p.m. Wednesday through Friday and from 9 a.m. to noon Saturday and Sunday. Pre-orders must be placed at least 48 hours prior to the scheduled pickup. ....

Like most of us, I enjoy treats, and when I think about treats, I think of baked goods. Of course, some of the best baked goods come from old-fashioned bakeries. Here in Illinois, we have some amazing bakeries. Some have been around for many years, while others are new but equally wonderful. Here are the Illinois bakeries I have come to love and some of the wonderful treats I have sampled during my visits!
1. Jubeltâs Bakery And Restaurant, Litchfield
Jubeltâs is my favorite bakery of all time! They opened their first bakery in 1929, then in 1959, they opened their only remaining bakery in Litchfield. While they offer cakes, cookies and treats, and homemade breads, the nutty butter is my favorite bakery product! Jubeltâs also offers wonderful meals and has the historic tidbit of being located off Route 66! ....
