How to Cut Onions Without Crying Like a Baby

Before we get into how to cut onions without crying, let s discuss
why onions make us cry in the first place. As onions grow they absorb sulfur from the soil and convert it to amino acids. When their cells are damaged (i.e., when the onion is sliced), those acids come into contact with enzymes that catalyze a series of reactions that eventually lead to the release of a volatile chemical compound called syn-propanethial-S-oxide that makes your eyes sting and water. (Sulfur absorption is also at the root of onions distinct flavor and
odor aroma—it s not all bad!)
Okay, so that’s the science (lite), but what are the solutions? Well, there are two major strategies: You can stymy the release of the chemical compound, or you can protect your eyes. (Or, when you re really afflicted, you can do both.) ....

What is Hibiscus? For Starters, It's Not Exactly a Flower

Hibiscus sabdariffa species.
What is hibiscus?
Often—and erroneously—described as a flower, the hibiscus we cook with is actually a collection of sepals (known as a calyx), the part of a flowering plant that protects the bud and supports the petal once in bloom. Before the plant flowers, the calyx resembles a pointed bud, holding the seed pod, but it unfurls as the flowers push through the pod.
Where does hibiscus come from?
Likely native to West Africa, East Africa, Southeast Asia, or Northeastern India, hibiscus goes by many names: Bissap in parts of West Africa; Karkade in North Africa (specifically, in Egypt, Sudan, and South Sudan); Rosela, Rosella, Grosella, and Sorrel in Indonesia, Australia, and across the Caribbean and Latin America; Mathipuli in Kerala; Krachiap in Thailand; Luo Shen Hua in China; and Flor de Jamaica in Mexico and across North America. ....

What Even Is Honey? | Bon Appétit

Where can I buy good honey?
Your best bet is to find local or regional honey at your market. The mass-produced stuff is usually a cooked-down (pasteurized) blend of hundreds of different honeys and not nearly as delicious.
What should I look for (or avoid) on the label?
Honey jars usually list one ingredient: honey. But that doesn’t tell you a whole lot about what you’re getting. Here’s how to decode a few other words you might encounter:
Raw
This is an unregulated term that refers to honey that’s either straight from the honeycomb or minimally heated. It can be cloudy (a sign it hasn’t been overly processed) and retains many of its good-for-you enzymes. Because it’s precious and expensive, save raw honey for when you can taste it front and center: on peanut butter toast, drizzled over a pound cake, by the spoonful before a run. You might notice a whiff of hay or notes of apricot, things like that. Use inexpensive clear and runny h ....
