First of all let s explore what customers are asking you for particularly in the corporate world here in the Channel Islands you know a lot of corporate entertainment going on at this time and I suspect you re being asked more and more for either vegetarian or vegan creations that s absolutely the case things have changed changed dramatically I think. You know as a chef you see lots of fashions you know a few years ago it s all very Nordic lots of the restaurants and that the t.v. Shows are all about about that the Nordic countries where they are you know there s loads loads of very Nordic noir and things like that. Some of the Nordic volume was lots of kind of smoke summons and things like that please it was just lots of Nordic food the top restaurant Noma that was in in Oslo I think or Copenhagen so you know that there was a lot of Nordic flavors and feeling and then it was very south american lots of proving restaurants and Brazilian restaurants are in the top 10. But this this kind of feels more than a fashion it feels like it s an important thing for the for the world to change the way we eat and why. That s cutting me out entirely or just reduce the amount I meet people I think think that diet is definitely changing corporately like you say people switching from sausage rolls and skills of chicken and beef to perhaps more vegetable based dishes to go now for lunches but every Wednesday night my son and I have a film night some really good quality time together by a lot of junk from a well known and I say junk I mean it round beige for you yeah and part of the beige creation that I put on the table last night was a vegetarian platter of sweet potato I mean rings and also cauliflower popcorn and out of all of the stuff we had a little miniature ticking Kiev s and little little cheesy things the cauliflower popcorn was the thing we both enjoyed the most it was utterly delicious it was cauliflower in a spicy batter that had a spicy dip it was sounds great Jess absolutely that when put on the menu Yeah oddly it wasn t just any cauliflower mostly. Just going to welcome into the studio Mike one of my glamorous assistants today Mr Mickey Hames who is working with us now Mickey good morning to you good morning now you happen to be is vegetarian or vegan vegetarian vegetarian we just exploring the trends when it comes to people like James catering for corporate affairs most corporations now are asking for a good mix of vegetarian I think so if you were doing a meal for maybe 12200 people there would be a handful of vegetarian or vegan but that has definitely changed and you see a much larger percentage ordering vegetarian alternative and for weddings for instance you know if we re doing a barbecue or a hog roast the salads themselves are a great great meal you know you could quite happily go to a wedding event on catering and you wouldn t need to worry about missing out on the meat because the salads can be so interesting and colorful if you used the right spices. On the right right and pulses in beans and things like What s your most popular salad lots of the moment is what s a sweet potato lots of bottom up squash stuff shows use quite a lot pomegranate all these kind you know it only takes a couple of English to make something really exciting granite is the devil s not not I m glad. It s just it s free fruit it s gritty do you like pomegranate I just think it s worth the effort to eat it to submission isn t it it is let s explore why your vegetarian because I m concerned that there s a lot of fake news going around about why people should be vegetarian or indeed really obviously if you feel strongly about the death of animals fear own satisfaction that s probably reason enough. And you do see some horror stories on social media about videos and how animals are treated but to become vegetarian or vegan to save the planet I think there is a lot of misinformation out there so I think we have to be very careful. About your it does just find out why Mickey s vegetarian for me it s quite simple really I just I value the the welfare of animals higher than I value the taste of meat per nuff I don t get as much out of me as I get from. Bob it doesn t outweigh the guilt I feel about eating animals have you always been for Terry not a about 5 years ago when I changed really fairly recently Yeah it was when I left home basically I started making more decisions for myself start cooking for myself . Home way where I was on the table. And then as soon as I start to be consciously thinking about it I realized yeah not for me and home with the rest of the family vegetarian no meat eaters or meat eaters My mum only white meat the rest of the family so perhaps we have to stop pigeon holing. In a weekend or strictly think it s like yeah because I don t really pigeonhole things that are vegetarian. Because I love a mushroom risotto you know I love macaroni cheese I like a mushroom omelet and I don t think one having a vegetarian meal tonight I just eat it at home we re eating a lot less less meat or you know stock I m not sure why that is fish I just don t I don t really notice that it s you know there s there s nothing missing from a from a curry a vegetable curry or a vegetable to gene or you know like you say results it s great it s not missing a great hunk of pork for all chicken on top of it let s find out in a moment what makes he might be having for Christmas Day lunch he might have some ideas for us as well and you ve got some ideas James Don t go anywhere because we are going to go through some vegetarian and vegan alternatives for Christmas and you won t want to miss it frankly. In the channel and it s your Jay Katie show with you until 1 o clock and I m enjoying the company of James Ferguson he s a Channel Island chef does outside catering for all sorts of events and I m also in the studio with one of my many glamorous assistants working on this program and he s Mickey hangs Mickey is vegetarian we re talking about vegan and vegetarian food this Christmas we ve had an e-mail in from our Peter thank you for getting in touch Pete he says morning Jenny could you please say something about Christmas food in diabetics he says in all the adverts we see it s all food that could make a diabetic very ill it is actually Pete you re right he says I ve been a diabetic for the past 3 years and all my doctor s advice lost 25 kilos in 3 months because my wife search for the best diet for me I m now on the lowest meds for my problem and to found that by changing my eating habits I feel better and I m fitter Well let s give a lot because I like saying thank you very much for letting us know that Pete because that s an inspiration to any other diabetics listening well done you he says this is such a big problem today perhaps food companies should take some responsibility as they do little to promote good food sense. And they re not too bad now we know there s a huge huge change and much much more much more on the market available there isn t actually some of the vacant products you can get in the supermarket there s one which is a sweet potato and pumpkin burger which is absolutely divine and I was introduced to it with my eyebrows rolling when my friend turned vegetarian for goodness sake because I was brought up by a mother who did it in a party once and halfway through cooking just an hour before the guess would be to arrive suddenly realised one of the party was vegetarian I can t tell you the sort of language she she beetle down into town to a well known supermarket that doesn t just stock any food and she bought a vegetarian meal and on the way back scraped her car so to this day my elderly mum blames vegetarians for the scrape on her car so you can say you can you imagine the sort of environment I was brought up in but actually when my friend Jack s turned vegetarian I had a flavor of the future is eating and loved it again you know why do you think you know exciting and yeah you know in Greece and the Middle East is lots of food that is vegetarian you don t even think think twice about it if you go on holiday. It s so what you know there s there s no meat there s no fish in the diet and you don t miss it at all one of my favorite things is getting some pitta bread and opening it up putting some home of Senate and then some or all mushrooms spring onions and any other vege that you want lettuce and it s all crunchy you ve got the roll mushrooms and the homeless together attics divine you talk about falafel in there as well yes oh yes now you re talking so you re making me hungry and I am I going to rumble I m an ardent meat eater although as you said James I think we ve started to cut down significantly the amount of meat we re eating we ve we tend to eat more fish now we do definitely definitely prawns and salmon although quite why fish is so expensive in the Channel Islands when we ve got the watery stuff around our edges is beyond me so another conversation yes and no derbies called Thank You for getting in touch with the show Paul and thank you for getting in touch with the show Debbie could you give us please every going to a vegetarian alternative for stuffing and I think you might want to make my ears open you know what I mean I think I think lentils are always a good substitute for for sausage me it s going to help things bind chickpeas and the like the same before if you just get some some different ingredients with these pistachios or apricot so date something to keep it kind of seasonal the takes again that will help that point together nicely so would you say the lentils in a vegetable What alternative do is argue you have to soak them cook them and then in a bowl maybe soak your date s as well so low you d make a thicker dull Yeah yeah effectively and then they roll it kind of in Greece proof paper. Because I m thinking the lentils and stop might be a bit watery I think if you cook the almost over cook a little less you so it forms almost a paste and then you just roll that So who are voile a layer of greaseproof paper and then roll that into a sausage you can make that in advance as well and just leave it in the fridge and just just slice it what Herb switching to it at all sorts you know you could put the time Rosemary. Since you turn vegetarian I know it s a bit of a personal question but does it keep you regular. It does again and it depends on how I mean. Because even being vegetarian sometimes if I m not cooking regularly and I ve been lazy with my shopping I can end up to stay in unhealthy foods past bread. So I never ate that much meat before and then the way so as not to change me too much I mean this respectfully but I think you re a lot younger than I am what you make slightly How do you 24 Ok half my age I just love it younger to. Talk about food being pastor and bread just all. Let s find out now what you ve got there that you can tempt us with James food wise so we ve got maybe a you know you ve got the lentil bakes the not roasts saying you re just adding seeds pulses from different vegetables that perhaps you know it doesn t just need to be carrots parsnips and you know potatoes you know celeriac artichoke some ingredients that are slightly different you can mix those into into any recipe that your You re going to you re going to pick up on google and just substitute I don t know the lentils 1st for something different start using you know chickpeas broad beans Beletski beans all these beans and pulses and seeds can just go into into any of the recipes you re going to pick up you know like I ve done here you know you ve got a Crumrine lentil bake delicious very Christmassy. You ve got a you cannot roast again you re going to pick the recipe up but that doesn t mean that s what you need to do you can substitute any of those ingredients with different different things so don t go out and necessarily feel you need to buy a huge sea packet of I don t know whatever the key ingredient is if in your cupboard you ve got something else that will do the job just as well a lot of people into Moroccan fare and I quite like Bulger we say if you meet and I can tumble a thing with cranberries and knots and things like that so quick. You could have a Christmas salad couldn t you with the you could yeah absolutely everyone else is having cold and just make the you know the vegetables may be slightly more exciting you know the sprouts I mean that fact can be you know whether it s just not saw not not in a certain will obviously not vegetarian civilians but some some punch at a through that so you know that that would be you know make the brussel sprouts more exciting but you know cashew nuts pine nuts piquancy any of those things just toast them slightly before you put them into the into the whatever is your you mix them with and roast your vegetables and yeah right eventually just going to gives a nice flavor I think you just slightly funnier in an hour I mean Honey is great isn t it you know it s very much I know it s just a better substitute for sugar How do you all stevia as good as well plant based Yeah how do you like your Brussels sprouts. Buttery. Because I think Brussels sprouts should only be cooked one way and you know I ve never had a problem with my boy he s only 12 eating Brussels sprouts He just because I rushed them a couple of them I think I had roasted perhaps he s not lived Macallan No he s not lived I m going to give you my recipe for the scraps in just a few minutes after this from my chair and if I. The other thing to do is not for the grounds but for vegetarians one thing I love is if you get some channel only increase and you put it on to saw into a saucepan and put it onto a low heat with some bits of garlic in your infusing the cream with garlic just cook that for about 5 minutes 10 minutes gently see the cream takes on the garlic flavor see if the cream and then put into the cream a tuna flagellate been. And then you could actually beans they re all creamy and garlic and actually for meat eaters That s a great compliment I think you re wasted on the radio. You know I watched I watched the Master Chef program he was not making the best fantastic and I m sorry to say that a couple of years ago from one of Jersey s Frankie restaurants there was a chef appearing on that and I was ashamed as a child Lyle and to see that the poor love couldn t even shuck an oyster on national television oh oh And I think you came from one of the you know the post. We ve not always as clean as we would like to make it but also a collegiate system where the idea of you you know the status that you can have within your own college and build up your peril achievements are huge so I think in lots of ways that s the the next part of that story because that system has also been exposed not always to do with drug taking but actually to do with the way in which money is used there s been an awful lot of attacks in the basketball profiles within the collegiate system they are usually involving Nike and Adidas and the big Morris we are companies cultivating kids from the genuine even in the recent scandal of celebrities and high fliers and so on paying you know big backhanders to get some of them are some sort of Ivy League yeah there were 3 or scholarships there and they go it s going to really a system that has some a regular room for various things of a nature says no legal stuff feel good lad I think a Monday was almost destroyed because there s no stuff cable so I don t I m an excellent pick out that you know but when I watch these major sporting events I don t believe it anymore yet you still believe it. We re going to talk cheese shortly but 1st. Christmas Eve. You re laughing already are always manic. I think lots of us need a bit of help with. Yeah that s what you re here for yes thank you yeah I think the problem is every kind of panics it s a last minute like we re going to do but there s so many things you can do around not just Christmas with any family get together around the table you can prep it up and we can do one dish in a minute put in the freeze freezer in the fridge take it out it s easy to stuff so . You can make it any time you want if you ve got a spare hour that s the time to do it put it away in the freezer forget about it until the day before Christmas Eve we take it out overnight and they can finish it off on Christmas Day for no more than about 20 minutes the job s done right so what we re doing Ok so what we ve got here is only 5 ingredients so it s a really simple one can you have them with this all right this is a take on the please red cabbage so we re doing a red cabbage and we re going to braise it off. With some lemon oranges and a little bit of sugar and that is it you can if you want throw in a cinnamon stick. In my face out there but he s not looking. But if you wish to do it please do so. In this way I don t think you need to be honest because the reason why this is a wine for Christmas in my book Ok. Crisp it s clean it s. A pool it s going all the kind of bouquet that you think of Christmas is in the wine you can add a little bit more suggest to it that again that kind of Christmas Well I think is enough in it Ok so what we re going to do is we re going to go red cabbage and we re going to cut it directly in half Ok and then half again and then half again so what we want to do is we are not going to end up with this kind of to Dish will kind of the work looking for mushy I thank you or not. So what you really want is nice thick chunky pieces of h. Ok rather than that which is good because normally on Christmas Eve I m standing there straight in this car but yes seems that in a long time when you re in a rush we really want this to be an absolute sort of chunky warming kind of on the plate not a mush that we are all mushy Ok so we re into half and half again having to basically make quarters or eights Ok and then we take the knife and we decor it to straight or take in the hard core taken in the middle of that so we ve done that we re going to cut that all up that s all that s up into nice chunks all salted so that you take your pan you put your plan on the heat and then you take your cabbage and you put your cabbage into the pan slow medium sort of heat no high heat Ok And at this point you crack open your bottle of reason now well people still need a whole bottle for this recipe we re going to go on the whole bottle of wine you don t need to go and buy a 910 Powerball or reason here you know you can go to the supermarket and pick up a 5 pound bottle like this one and just use that Ok can you keep a week last for yourself I would suggest telling the party do that for sure. The whole view remember here is a Christmas. So let s go and that s what you do is you re going to pour your bottle of recently in over your car make sure your cavity is covered if the bottle of wine doesn t fully cover the cabbage Ok just add a little bit of water so that it s purely covered but make sure it s covered Ok Ok then on top of that some little bit of brown. So there s a little bit of tartness going to come out of all of this so you need a balance in it Ok So that goes into there then we ve got orange and a lemon that s all going in doing this right so what we re going to do is we are going to take one point about half of each so it s going to cut them in half and then into quarters so that goes in the pie and we give us a really gorgeous area look at the color of that already so this is a really great gorgeous brew a Deep Purple and with and you can see there s a lovely them and then the orange is the color in there and you can already see that the cabbage is starting to turn the wine that kind of deep purple the kind of beautiful rich color lovely hair sticking out on to the back or we turn that dances over lowish heat and we leave that for no more than about an hour to be honest just let it simmer go for a bath come back before Christmas and you how you sound very very relaxed see a lot of very chilled. Care you re fed when you re fed says well in the bath with your reasoning a lier So it s they all sort itself out in the promotes Oh so then you just let it cool down cool it down makes this really cool not know he it s all in that put it into an ice cream container or a bowl if you have got the lid for it just click on it and put in the freezer and then just leave it so all I really want to do on Christmas Eve is take it out and you want to have a Save a calendar something like that and pour the whole thing or into the whole thing and into that but put a bowl underneath so what you want is the juice to reach to come through there and leave the cabbage on the top to finish it off all you really need to do is just per little bit of reasoning if you still got any left if not crack another bottle it s fine if you don t I mean it s Christmas out there is plenty of time Lovely out of the butter throw in your cabbage stir through leave it for about 15 to 20 minutes on the low heat cook it through that s it. Let s get together so yeah so how many cheeses do you really don t this cheese board Well I think you know I think 3 is pretty soon although I normally have about 6 and I m only 2 so I can t help it but but really I think we get we ve had so much by the time it gets to cheese you want 3 just really nice things that you can that will just you can sit with and drink with your poor finish up your wine and just go for 3 really good ones just really really good one kind are we looking up they want your recommendations so we re in the supermarket I think the big one for the supermarket I think the thing that they do really well is hard cheese so I would think you can always find a bit of Conti or a bit of awesome Aracely there. That will just be lovely nutty warming restorer to of the cheese bring you arrived after the after to run absolutely right so we ve got a bit of heart and then for a bit of soft something soft and white in a beautiful. White velvet jacket something blew me and I wouldn t be unveiled. And for that I wouldn t go precut because the thing that supermarkets do really badly is the precut and the kill the cheese cheese is a living thing you know so you get a wedge of cheese in a supermarket it s not going to have developed anything to a tong So you need to buy a whole one yet if you can you get those little like a whole Cambodia or a little whole goat cheese or something something was mauled all the way around so it can continue that maturation making notes here in just a 2nd member there s a. Cabbage as well. And then last one blue cheese and I think supermarket blue cheese is really grim. I think again. And it s that it s that really angry aggressive metallic tying that those blue cheeses have from there there must be something in the supermarket fill in the believer diety that we re here for I m quite partial to tell anyone please but this is a quest to become. It is like tar you can push it really well make it smaller base I used pieces but the fish thing about it I think is you can make it advance Also you can heat in the microwave which means you re not using a precious open space let s get started with this gorgeous concoction and it s for the chocolate which suits me to him to the ground where do we start Ok what we start off with are sugar and eggs and I would cease to be the best thing to you as you might not think I ll make a difference but absolutely well so the 1st thing we re going to do when a mix up the cost of sugar and the eggs being up the eggs before they go in the ball just makes it easier for them to incorporate and also just makes things a bit quicker. The next thing we re going to do is we re going to add a mix of melted chocolate and butter and I the thing to remember about this is that there s no corporate in the stressed a piece of all lists on really good chocolate so this is all or 70 percent cocoa solids Belgian chocolates really truly good chocolate what I would see if you want to get the best chocolate you possibly can and the other thing to remember she melted chocolate in the butter together over the pond just really gently don t want to burn anything that s been cooling for that but maybe half an hour but you want it to be still liquid but not warm enough to do anything to you don t want to end up with scrambled eggs and up all their. Looks chocolate lovers have a dice those are they re really a lovely moment when you me can play nice when you have I did the chocolate the button. Makes anything that s never going to come together and then it turned into this really lovely smooth mixture is a really nice moment I think we ve just experienced that many minutes here in full force it just starts so what we re going to is a mix of plain fire and southeastern Florida if you wanted a for me you could use to all play. But we ve got it about freezing huge and it makes us slightly keep here also in this flow thing it s a funny looking color it s mix of spices in there Ginger and cinnamon and some cloves in there and what you want to do the stage we don t serve any thing you don t want to get into this we want to make sure the flowers and courtly enough that you know going to get any little specks of flour when you come into play. So again 3 cheeses I d go for soft white sheep s milk cheese so the credible British examples of this flower Marie in particular and Wigmore just really musing. Gentle and sweet but just so. These are whole chestnuts we wanted just a little bit more probably just educate them out just give a quick break and basically yeah they re all into the bottom like so Ok nice and easy get there what we do is we take our source and we just pour the source right over the top. And we take the spoon and we make sure that it s well put into all the corners so they re covering the whole of the biggest sauce in every made from basically that s what we re looking for Ok to have a little glen a display it will have to sprout come on how is under its love and love shown to it so in a blender we re going to have. Just some bread and some chopped nuts and we re going to make a little sort of like a crispy kind of topping to go with this Ok along with some cheese All right so it s going to blast that switched off we would do if it was switched on or as well Ok so here look my mistake. On top of your mixture with the source so the bottom you ve got your chestnuts your pants set is through the source you have got your Brussels sprouts you ve got your cheese on the top then you take your bread and nuts mix and you kind of get a really good sprinkling all over the top Ok so you want to cover the whole dish all right once you ve done that leave it to cool because it s the war from the source been on it and also the Brussels sprouts are going to have a little bit at that point there what is totally cool give it a really good cling film so this completely put it into your fridge and then when you want to cook it all you need to do is put the oven about 200 degrees but never in 20 minutes golden brown on the top your prosperous way of telling you well I m going over to snowy minutes if you can compare me Phoebe how much is cheese close the dish after your own heart well I love sprouts I think you re wrong Jenny I think it s a great yes I love that you are willing to be converted makes things to so much better. Because I m going to take the Christmas pudding this much maligned Christmas pudding and then I m going to chop up I m going to chop it really fine and then I m going to bake it I m going to bake those bits of Christmas pudding so it s like a Christmas pudding toast decide and nobody s going to stay with me I think it was you know your mother and we had all year long way to abated. And then on that Christmas put in that crispy Christmas pudding I m going to have some blue cheese here of course I should have still because Stilton is traditional By might have stitch will turn which is a rom. Version of Stilton and it s amazing I have a beautiful bit of Cork and. Love it yeah yeah yeah you re bouncing all of the right Ok and I am going to have a quick taste of the sprites while I m here just to see a fine converted I can only say I think it benefits from the cheeses I ll see everything everyone used to use everything. But I ve never really enjoyed them and I was determined to find a recipe that was tasty yet a recipe that you can make with Brussels sprouts and I m assuming this is a recipe where you can make them and they can go on the plate with your Christmas dinner yes absolutely and so obviously Brussels has quite a bit of flavor to them Yeah so you need something is doing the kind of disguise the Brussels and I love ts as you know so I ve gone with he s a professor out all recut why not this cauliflower cheese as broccoli cheese why not Brussels sprout cheese Exactly and it s a very simple read they close the on Christmas Day We re all a bit all over the place trying to cook a 100 different things and yeah so what are we looking at price wise you reckon is it as a as a gas a for people for this probably just a couple of quid Yeah not too much to 2 or 3 pounds Ok All right so what do we quantities really what do we need a case you need Brussels sprouts of this lady out of the money you need this recipe for around 600 grams but you can do less that would be up to find 50 grams of Busta 50 grams of milk 75 grams of find the grain to pick arena now you could use Parmesan instead but I would recommend if you can get hold of Purina to use this year. Quite so see and it goes a little bit melted at the end which is quite nice to continue having a Doesn t it make those those 3 which you don t really get Parmesan so not you can find to careen I do and then black pepper and yet when we start what do we do Ok so obviously got to give the sprouts little bit of a clean and the best way to do that is to remove the outer leaves and trim the bottom and then you want to chop them all Inhofe them for about 3 to 4 minutes so I ll point out that chopping the Brussels sprouts in half and peeling them can sound like a laborious job but as it is Christmas this is the perfect thing to be doing well sat in front of the t.v. With the washing up all on your lap while you re watching something drinking mulled wine just eating chocolates just do it not Christmassy evening type thing exactly this is the night before Pratt Yeah it s all my present for my rice potatoes my carrots everything so this is definitely the night before prep and it s very simple so you could give this job to somebody else in the House who want that yes children pocket money excellent as an idea Ok so what s that chopped and paled Yes so you need to boil them for around 34 minutes but what I would say was that with Brussels sprouts Typically if you do find them a little bit better I think they need to be a little bit out and say so cook them I would say on the sides 3 minutes rather than 4 if you don t want to go sort of mushy Yeah and then give them a good train to drain Quick Takes again the keep cooking is there in the whole water. So leave them on the side while they re just cooling down at that point you want to find a frying pan and he Busta. Agile brussel sprouts in your milk can until it s bubbling away and that s the point where you had to cheese in and cook it for literally a couple of minutes and you want the cheese to start kind of thicken into the sauce but you will get a few lumps stringy lumps of cheese in which is really nice so don t worry about that you want but and that s it and then you just want to add a little bit of black pepper I love the sound of this and you actually made this this morning and you tried it and what the good conclusion I really enjoyed it genuinely I was very hungry when I am and I could have eaten the hobo but I thought it was a good idea to have lunch. Yeah but they were really delicious and obviously on a plate with lots of the different things they would there really nicely I think if I was going to eat those on my own which you could actually have as a male let s be honest although you know you probably don t want to be in the same room as many people for a while afterwards I would add some chili fresh chili and that s well oh interesting it s just me bacon might be nice but I know there s a lawsuit but actually that left Brussels Sprouts the bacon which I m sure are really really lovely but from a person I want something a little bit stronger than that yeah I like to tell you agree with you but you can I think that I think if you do the bacon thing sometimes it can overpower the whole thing and it s just like having squishy begun. The We ve gone through quite quite a quite a few pretty bad seasons and situations it got worse with the ownership of the earth the football club and fans tensions in it got got worse and worse and and then out of nowhere seemingly Jim Smith came along with Nick Marion the would stop partnership and took over the football club and I remember I mean just the sense of relief relief a new supporters but looking in speaking to walks United supporters who had been through those days in the 1980 s. The excitement on their faces somebody like an oxygen aura to legend like Jim Smith was coming back to the football club Now obviously everybody in football who knows anything about football knows who Jimmy Smith is but to have him coming back to the football club and see what massive lifted it gave not just to the football club but to the city was fantastic just in the days after that news was announced people stopping you in the street if you re wearing an oxygen item and talking about the return of Jim Smith So the the impact that he had on this city on this county in the football club was absolutely evident and it was we really wanted to be a part of that time.
