I know I run a website but I'm still very much a paper person and have a thing for note taking and nice journals, so, yeah, I really like this and could imagine giving it as a gift to an enthusiastic new baker.   * * *  The server that The Fresh Loaf is on needs to be upgraded soon, so a heads up that there may be a day or two bumpiness in late March or early April. Help! Semolina tight crumb.

I don't see a contradiction: you can have a big oven spring and bloom, and a tight crumb, that's normal. Anyway, recommend posting in the semolina CB. This is a great looking loaf! alfanso with this beauty.  Yeah, a number of us scratch our heads about fantastic oven spring, as you have here, and minor open crumb.  Semolina/durum flour is just not overly friendly about open crumb.  Have a look around at the bakes from the current Community Bake and you will see that your bread falls right in line. I haven't done actual durum flour since getting into sourdough --  but did use some durum semolina in recent bakes. I love making bread with durum flour and especially when I can mill it myself. Here is my most recent bake done for the current Community Bake.I just ran out of Durum berries recently and was happy to find some at a reasonable price on Amazon. Usually the shipping charges to New York from other sites are astronomical, but since I was able to use Amazon Prime it was free. For
