Carmen Chan’s Darwen-based dessert trailer Amai takes inspiration from China, Hong Kong, Taiwan and Japan among others in its sweet range. Sweet tooths usually love the traditional bubble waffle originating from Hong Kong and Taiwan’s frozen ice cones, which have lots of fluffy ice cream shavings.
