A decade ago, Ahmet Dede (35) had just moved to Ireland with no idea as to which career path to follow and had never heard of the famous Michelin Guide. But last Monday night he was the only chef in Ireland to gain a shiny new Michelin star — for his restaurant Dede in Baltimore, which opened last summer. “It is a proud day for my family,” he says. This is not Ahmet’s first Michelin star — he won one at Mews, also in Baltimore but now closed, back in 2018. The food at Mews had shades of Nordic but, at Dede, Ahmet is delving deep into his Turkish heritage.
