The Dish: Baja California-inspired Ponto Lago restaurant opens in Carlsbad

Ponto Lago, a new fine-dining restaurant at the Park Hyatt Aviara resort in Carlsbad, opened for dinner service on June 10.
Ponto Lago replaces the former Vivace restaurant, which closed during a $50 million, 18-month renovation at the resort that was completed in April. The dining concept under French-born executive chef Pierre Albaladejo and chef de cuisine Thomas Tuggle is global flavors mixed with inventive Baja California-inspired cuisine.
One feature of the new menu involves the chefs serving some dishes tableside. Diners can also create bespoke customized cocktails. Some of the features on the new menu, served from 5 to 9 p.m. daily, are Pacific Manila clams with green rice, quail with corn polenta and cherries, organic peri peri chicken with charred corn succotash, house-made chistorra sausage and daily roasted ducks, squab, rack of lamb and suckling pig. Entrée prices range from $24 to $72. Diners’ parking is validated. ....

The Dish: Islands introduces healthier, customizable menu

Islands Restaurants, the 39-year-old Carlsbad chain known for its Hawaiian-inspired burgers and skin-on French fries, is rolling out a new menu it calls “Clean and Customized.”
The new menu makes the fries an optional side dish that diners can now customize with different seasonings and toppings, including the new Ghost Pepper Fries and Truffle Fries. But the bigger change at Islands that will be gradually introduced over the next year is a commitment to serving only hormone- and antibiotic-free proteins and no artificial ingredients or preservatives.
Company president Michael Smith said that with guests increasingly interested in eating healthier foods, the company decided to use its downtime during the pandemic to map out plans for the “100% clean” menu at its 44 restaurants. ....

Cesarina Mezzoni was only 20 years old when she and her husband, Niccolò Angius, made the decision to move to the United States in 2015 from their native home in Rome, Italy.
“It was an impulsive move,” Mezzoni said during a phone interview. “We liked the city, we liked the weather and so we decided to move here.”
Mezzoni is a self-taught chef whose Seychelles-born mother inspired her love of Italian cooking. Mezzoni’s mother learned traditional Roman dishes as a way of assimilating into the Italian culture. Her mother’s passion for Italian cooking rubbed off on her daughter. ....
