SALT LAKE CITY — As Utah restaurants get ready to open back up to full capacity, they are struggling to find enough people to fill their staff.
While some might place blame on unemployment checks or the pandemic, those in the industry say the real reason isn t about wages.
The staff, however, tend to run at 110 percent when the rush hits.
When we do get busy, we re just running around non-stop, back of the house, front of the house, said Hiro Tagai, the restaurant director with Sapa Investment Group, which owns Purgatory. We have managers helping bus. We have cooks running food. ....

Riverton giving away gift cards to boost local economy

RIVERTON Local businesses struggling to recover from the coronavirus pandemic could get a boost in Riverton after the city announced it would be giving away $1,000 a week to shoppers, diners and other consumers.
The Restaurant Revitalization Fund was also opened to restaurant owners across the country.
I just want to encourage our residents to support our businesses when and where they can, said Mayor Trent Staggs.
Staggs said business was picking up in Riverton. Over the last few months, they ve seen gains in sales tax revenue, but he wants to encourage more people to shop local.
Riverton has more than 500 commercially licensed businesses and 1,500 businesses based at home, and starting Monday, you can buy from any of those businesses and then upload your receipt to rivertonutah.gov/local. That will enter you into a raffle to win a $100 prepaid Visa gift card. ....

In the early days of the pandemic, Mark Alston, the owner of The Bayou, purchased $3,000 worth of equipment that would allow his Salt Lake City bar to bottle and sell draft beer to go.
Sales of the sealed containers were brisk, he said, until last week when bars and restaurants across the state received a letter from the Utah Department of Alcoholic Beverage Control saying sales of “beer to go” would no longer be allowed except in a few instances.
The DABC is taking away “an important lifeline” for bars and restaurants, Alston told The Tribune. “At a time when to-go sales are mission-critical, it’s like cutting off one leg of a three-legged stool.” ....
