Spicy beef burgers recipe Follow My spicy beef burgers are inspired by the classic meat koftas you find across the Middle East. The meat is flavoured with grated onion, parsley, black pepper and chilli. Thatâs it. The burgers donât have a binding agent, so cook them fast for the best results. Prep time: 20 minutes | Handful of finely chopped parsley leaves 2 tsp Turkish pepper flakes 1 tsp ground black pepper 500g minced beef, 20 per cent fat 1 tbsp olive oil 120g mayonnaise 1 tomato, finely sliced METHOD Preheat the oven to 200C/ 180C fan/gas mark 6. Using the coarse side, grate the red onion and then squeeze out the excess moisture as best you can. I use my hands, but you can use paper towel. Add to a mixing bowl with the parsley, Turkish pepper flakes, black pepper and a good pinch of salt. Mix well. ....
Falafel burgers recipe Save Follow Prep time: 20 minutes | Small handful of finely chopped parsley leaves Small handful of finely chopped coriander leaves 1½ tsp ground cumin Chilli sauce (optional) Preheat the oven to 200C/ 180C fan/gas mark 6. Put the chickpeas into a mixing bowl and using your hands, squish them into a coarse mixture â about 80 per cent broken down (I find a mixer goes too far and the burgers break up later). Add the parsley, coriander, cumin, garlic granules, lemon zest and a good pinch of salt to the chickpeas and mix together. It will look rather dry, but you just want all the flavours evenly dispersed. Add the egg yolk, mix well and then bring it together with your hands. Divide into two and shape into patties about 1cm thick. ....

William Sitwell eating at Stanley s on King s Road, Chelsea Credit: Heathcliff O Malley A gruff Yorkshireman looking for solace in the fancy echelons of the metropolis might be mistaken for thinking they would feel right at home at a place called Stanley’s. After all, the menu’s brimming with dishes of crumpet, cod, livers, beef and Cheddar cheese, and the chef’s called Burt. But names are deceiving and our travelling friend from the north might find himself a fish out of water. For Stanley’s is in fact a fluttering and delicate exotic bird of a place where the livers are chickens’, whisked to the lightness of a fluffy cloud and Burt’s first name is Olivia. ....
