Hill farmers could tap into new markets for lighter carcasses by intensively finishing lambs to a deadweight of 12-16kg.
With producer groups in Ireland already supplying up to 30,000 lighter lambs annually for export to southern France and Italy, as well as to domestic food retailers, there is potential for UK hill sheep farmers, too.
The biggest challenge with this system is achieving sufficient fat cover to meet market specifications.
Here they advise on the key considerations for hitting targets.

With lambs typically weighing only 22-26 kg at weaning, an intensive high-energy finishing diet is needed to get an acceptable fat level and finish them in a short time span. ....

Nautilus Pier 4 opens: Meet the Seaport's newest waterfront restaurant


A slice of Nantucket lands in the Seaport on Thursday, when Nautilus Pier 4 sister restaurant to The Nautilus on Nantucket throws open its doors.
The waterfront restaurant has been in the works for a while. Nautilus was supposed to debut at 300 Pier 4 Boulevard in early 2020, but plans were pushed back by the coronavirus pandemic.
“I can hardly describe how it feels to finally be opening. This day has been a long time coming,” said founding partner and sommelier Stephen Bowler in a press release. “Through the pandemic and everything the past year has thrown at us, this team has buckled down we’ve even grown and as a result, came out stronger than we could have imagined. And now, we get to share the restaurant and experience we’ve created with all of Boston. It’s a dream realized to finally see people in and around this space.” ....

Teagasc appoints new head of animal and bioscience research

Teagasc has appointed Professor David Kenny as head of its animal and bioscience research department.
He will take over from Michael Diskin who retired last year.
The main animal bioscience facilities are located at the Teagasc Research Centre, Grange, Co Meath from where Professor Kenny will lead the department.
There are also facilities and staff in Teagasc Moorepark, Co Cork, and Teagasc Athenry, Co Galway.
Professor Kenny holds a degree in animal science from University College Dublin, as well as a PhD in nutrition and reproductive physiology of cattle. ....

Teagasc has appointed Professor David Kenny as head of its Animal and Bioscience Research Department. He takes over from Michael Diskin who retired last year. The Teagasc Animal and Bioscience Research Department (ABRD) was founded in 2008.
It rapidly expanded, linking Animal Bioscience with previously existing animal science research areas in Teagasc. The main animal bioscience facilities are located at the Teagasc research centre, Grange in County Meath from where Professor Kenny will lead the Department. The Department also comprises facilities and staff spread across two other Teagasc research centres; Teagasc Moorepark in County Cork, and Teagasc Athenry in County Galway. ....
