âCooking en papilloteâ â which is to say loosely wrapped in paper â âis massively underrated when it comes to quick meals,â says Rick Toogood, executive chef and co-owner of Prawn on the Lawn, in Cornwall and London. âItâs such a nifty trick, and you can use small whole fish, fillets or shellfish.â Lay the seafood, veg, butter and seasoning on a sheet of greaseproof, splash with a little white wine, wrap and bake in a 200 degree (180 degree fan) oven for âa complete meal in a bagâ. A favourite Toogood late-spring go-to is mackerel, olives, red onion, tomato, garlic and dried oregano.

Overlooking the UK’s most famous surf beach, The Fish House on Fistral Beach offers freshly caught seafood from Cornish crab sandwiches or sea bass salads for lunch or a seafood sharing board for evening dinner. The restaurant is open now for outdoor eating and will be taking table bookings from May 17 with bookings filling up fast.

Described as the ‘crown jewel’ of Padstow, this trendy eatery features clever dishes of fresh seafood and creative fishy tapas dishes. From the outside it appears to be a traditional fishmonger, but on the inside you’ll find a modern and industrial interior with metro-tiled walls and multi-filament light bulbs hanging from the ceiling. Dining is available in its giant marquee until indoor tables open.

Last year, restaurants went to great lengths to remain open for business in the face of Covid; across the country, tents and gazebos were erected on lawns, while patches of previously unused land were claimed for greenhouses and pods to house guests observing the rule of six.
One restaurant went even further – with no outdoor space to plunder, the owners of Prawn on the Lawn in Padstow decided to up sticks entirely and set up camp at Trerethern Farm, which overlooks the coastal town.
