Bit House Collective is the answer. Opening next week, the new bar is a collaboration between award-winning bartender Natasha Mesa (Deadshot), critically acclaimed chef Carlo Lamagna (Magna Kusina) and Pono Brewing, makers of a notably crushable pineapple kölsch. For cocktail nerds, Mesa’s involvement might be the most exciting part of the project. A talented bartender known for her technique-driven approach to drinks, Mesa bootstrapped her way from an industry outsider hosting a Tuesday craft cocktail night at the karaoke nightclub Trio, to spots at the Benson Hotel and Raven & Rose bars, all while entering and winning multiple national and international cocktail competitions. For the past two and a half years, Mesa has managed Deadshot, Adam Robinson’s innovative bar known for its culinarily minded cocktails -- among Mesa’s most popular drinks there was the Super Soup, a take on a tom kha soup, Thai spices, coconut milk, prawn heads and all.
