In a guest column published last month, the field president for Aramark Higher Education, Trevor Ferguson, wrote to explain some of their business practices in the context of rising scrutiny of their food service contract with the University of Florida. As part of the movement behind that scrutiny, Food Justice UF would like to respond. Our coalition demands the inclusion of six specific, quantitative and stakeholder-driven measures in UF’s invitation to negotiate for a new food service contract. These measures are to support food service, food chain and farm workers; reduce greenhouse gas emissions; increase purchases from local small and mid-sized farms and vendors; and end support for the exploitation of prisoners. Ferguson’s column was more of an advertisement for Aramark than an engagement with these demands, and advertisements rarely give you an accurate view of the product.
