View Comments When restaurant owner Matt Pool opened his brunch spot, Matt's Big Breakfast, in 2004, expanding throughout the state wasn't part of the plan. "Our goals then were to be able to pay rent and fill up our 24 seats," Pool says, describing the original downtown Phoenix location that occupied just 800-square-feet. After the first restaurant opened, it was eight years before Pool launched the next location inside Phoenix Sky Harbor International Airport. Now, Pool is getting ready to open two new locations, expanding the popular breakfast chain to seven restaurants. The two new restaurants will be the farthest flung locations, with one planned to open near the Arrowhead Ranch neighborhood in north Glendale and another near Gilbert's Agritopia neighborhood.
