Last winter, Judith Stokes held a two-day smash burger pop-up at her upcoming North Portland restaurant, Derby, hoping to introduce the Kenton neighborhood to the new space.
The only problem? After she’d closed her original restaurant in the old Cup & Saucer space, Derby 2.0 had yet to be built.
“It was a nightmare,” Stokes said. “I only had one outlet, so we had to run a power strip and borrow all these pancake griddles. We had an employee whose job was to kick on the power supply every time it would trip. One day we did 68 burgers in two and a half hours. There was grease going everywhere.” ....
