SOUTH BEND â Eric Robertson needs an extra 200 employees to staff his restaurants. As the vice president of operations for Delight Restaurant Groups, Robertson oversees 28 area Taco Bell locations, and things are getting tight. In recent weeks, he has made daily decisions on which locations need to close early, and when, because of a shortage of workers. âWeâve modified operations so that we can serve our guests in a reasonable amount of time,â Robertson said, âso we are looking at it on a case-by-case decision.â After a year of dealing with shutdowns, capacity limits and mask requirements, the restaurant industry been hit with yet another potentially devastating challenge. ....

Coilin Walsh and his wife, Ashley, initially purchased 5 acres of land on the north side of Mishawaka to start a small farm as a way to teach their daughters the benefits of gardening and working with nature. The family works on weeknights and weekends at Walsh Family Farms cultivating such produce as radishes, kale and tomatoes and has simply sold the items to the public at a roadside stand near their home. But this year, they wanted to do more. âThe real benefit we saw with this is that the farmers market serves as an effective means to set up a time and space to connect with the local community,â Coilin Walsh said. âAnd itâs close to where you are, and that was a big reason we decided to join.â ....
