The humble oyster is on the brink of extinction around the British coastline.“We like to think of oysters as little super-heroes of the sea. Although they’re small in size, they’re capable of making some huge changes in our marine environment.” Conservationist Celine Gamble is trying to restore the dwindling population and clean up the UK’s coastal waters at the same time.“The European native oyster has declined by 95% over the past 150 years. That’s due to over-fishing, pollution, habitat loss and disease. I have long enjoyed everything about the Reuben sandwich – except the corned beef. To me, it’s always been secondary to the griddled rye bread, zippy Russian dressing, gooey Swiss cheese and crunchy sauerkraut.
I often gravitated toward what many delis call the Rachel, not the infamous Jennifer Aniston haircut, but rather a Reuben made with turkey. Oyster farms feel strain of pandemic as demand declines


The coronavirus pandemic has made waves for the seafood industry in Maryland. Business owners say demand has dropped, particularly for raw oysters, in many restaurants. Industry stakeholders have gotten creative to keep business afloat. The raw bar at True Chesapeake Oyster Co. in Hampden, like much of the restaurant, sits empty these days. The pandemic has bit down hard on profits. It has been something that we ve just had to keep staying on our toes and rethinking everything, Executive Chef Zack Mills said.Mills has seen as much as a 75% drop in business and said there is no sense in staying open. Just business causing us to be slow enough that we need to kind of take the winter off. It has been a tough go, Mills said. But unlike the restaurant, the market is flooded with oysters.
