Crock Spot Opens Second Restaurant in Park Hill


Some brick-and-mortar restaurants have chosen to roll out food trucks to help diversify revenue sources during the pandemic, including Colorado classics such as The Fort and Beau Jo s. But one food-truck operator has gone the other direction, bringing comfort food to two Denver neighborhoods.
Steven and Mandy Smith opened their first Crock Spot restaurant last November at 4045 Pecos Street. The move came after a decade of serving hearty bowls from their food truck, which got its name from crockpot cooking (even though the truck switched to more traditional oven and stovetop cooking shortly after launching). The Sunnyside Crock Spot has been serving up rice, barley and quinoa bowls topped with the likes of pulled pork, Celtic white bean stew, jalapeño shredded beef and root veggie curry to receptive neighbors over the past four months, even during the COVID-related dining-room shutdown that lasted from November 20 to January 4. ....

New Denver Restaurants and Closings in February 2021


Cautious optimism was the theme for bars and restaurants in February, which saw a combination of declining COVID-19 numbers, increased dining room capacity and a second round of Paycheck Protection Program loans helping businesses stay afloat. While many eateries are still choosing to stay closed until patio weather returns and health and safety for guests and employees looks more certain, a surprising number of new restaurants and bars opened last month including a few big hitters.
Biggest of all was Perdida, which opened the doors to its bright, well-appointed open-kitchen eatery on February 8. The coastal Mexican cantina took over the former home of the Tavern Wash Park and transformed it from a clubby sports bar into a sun-drenched tribute to Baja s beaches. Over in Aurora s Fitzsimons neighborhood, a new version of Ambli Mexico cropped up. Fans of Ambli, which was originally located at 600 South Holly Street, only had to wait a couple of months for the move after the re ....

Joshua Pollack Brings Rosenberg's Bagels to Boulder


Joshua Pollack, a self-professed Jersey boy from Bergen County, came to Colorado in 2002 to attend the University of Colorado Boulder. He liked the state, but missed the bagels from back home.
He was convinced that Colorado-made bagels could be more than just bready rings, though, and after other entrepreneurial endeavors, he decided to go to culinary school while taking post-graduate business classes. He also spent time in New York City learning the bagel trade and testing the water there before tinkering with Colorado’s to replicate the mineral content of the Big Apple’s H20.
The resulting bagels proved exquisite and addictive, with a tender crumb and a delicate skin providing equal parts crackle and chew. In 2014, after a short stint selling them at the Galvanize co-working space in the Golden Triangle, Pollack opened Rosenberg’s Bagels & Deli in a long-vacant building at 725 East 26th Avenue in Five Points. ....

Beau Jo's Pizza Debuts Food Truck


When you think of iconic Colorado dishes, pizza doesn t exactly spring to mind. But for fifty years, Beau Jo s has been baking its distinctive Colorado mountain-style pizzas thin on the bottom and encircled by a bready crust as fat as a mountain-bike tire.
Originally, folks had to stop in Idaho Springs for a bite or a bellyful of Beau Jo s, but over the years, the pizzeria expanded into multiple towns on the Front Range. No longer were the pies sold by weight and topping out at five pounds relegated to après-ski dinners; you could get your favorite combo in Denver, Arvada, Evergreen, Fort Collins or Steamboat Springs. But Beau Jo s closed its Denver outpost, at 2710 South Colorado Boulevard, in 2017 the building was demolished, and a Chick-Fil-A now stands in its place leaving a long drive once again for anyone on the south or east side of town. Every Denver Restaurant Opening This Week


This was a quiet week for openings and closings, unless you re looking for new locations of your favorite fast- food joints. Cupbop, the Salt Lake City chain that does Korean barbecue in a cup and doesn t plan on slowing down until all creatures in the universe experience Cupbop, opened its second metro Denver shop. The first is in Arvada; the second is on Colfax across from the Fitzsimons medical complex and is open from 11 a.m. to 9 p.m. Monday through Saturday.
And in Lone Tree, In-N-Out Burger opened its third Colorado restaurant, after debuting in Aurora and Colorado Springs last November. The company experienced major COVID-19 outbreaks in January, with more than 160 cases reported between the two stores, but that hasn t curtailed long lines at the drive-thru. ....
