Lying beneath the cliffs of Lynton, the coastal village of Lynmouth is quieter than Lynton, where visitors are able to wander between the ‘chocolate box’ fishing cottages and admire the scenery at the harbour. ....
Owners Colleen Kothanek, Jon Webb and Stephanie Norris had been thinking about expanding for a few years and signed the lease for 414 Arboretum Drive before the pandemic. That brought delays in the process, but they are now closer to opening. “It’s finally all coming together,” Kothanek said. “This is the fun part, when you can see the pieces falling into place.” Booths and equipment are being placed now. She said the new restaurant will have a large outdoor seating area that can be enjoyed year-round. The U-shaped bar extends from the interior to the outdoor space. They don’t have a final date for the opening, but hope Blue Surf at Arboretum will be official in about a month. ....
