First Look at Guapo Taco in Fort Worth | Dallas Observer

After Mariachi's Dine-In moved to a bigger location, chef Angel Fuentes decided to stay put and start his own restaurant, Guapo Taco, influenced by flavors from his home, Monterrey, Mexico. The lamb birria is the star of the show.

Birria is the latest taco trend in Utah, with more than a dozen restaurants and food trucks serving the tender, slow-cooked meat.

One of the hottest food trends in Utah — and the U.S. — is birria tacos, made from tender, shredded beef and served with a dark red consomme for dipping.

The first thing you notice when you walk into Astoria's brand-new Krave It on 30th Avenue is, like,
whoa... there are a
lot of different kinds of pizza here, and most of them look demented as hell. There's a pie covered in tater tots, and there's one with crushed up Cool Ranch Doritos all over it. Macaroni and cheese, plantains, corn, fried chicken, mozzarella sticks, chicken parm, french fries, garlic knots, even goddamn fried Oreo cookies all make an appearance on top of these cheesey concoctions. Plus there's Krave It's signature "sauce spiral" going on atop most of these, adding to the overall bonkers vibe.

Matty Matheson launched Birria Balam in Toronto this weekend in the old Jules Bistro space with its pre-order menu of Jalisco's beloved sloppy stew tacos and sides of consomé for dunking.
The new project is headed by Kate Chomyshyn and Julio Guajardo—the couple behind Toronto Mexican spots like Kensington's El Rey and Rosalinda—in partnership with Matheson of Matty's Patty's and other appropriately branded ventures.

Austin's Latest Taco Craze Comes From Tijuana Via Instagram

Social media is responsible for spreading countless food trends across the globe, for better or worse. An insatiable obsession with food porn is what helped launch Tijuana-born birria de res (and its cheese-laden cousin quesabirria) into a food sensation that is rippling across Austin, and the whole country.
Birria, a dish from Jalisco, is traditionally made from goat or lamb and slow-roasted in a chile-based adobo for hours. The Tijuana version is said to have started in the 1950s when Don Guadalupe Zárate opened a street stand selling birria de chivo (baby goat) but switched to beef to achieve greater yield, using a cut similar to brisket.
