How White Purveyors Came to Dominate the Fermented Foods Industry


The first time I tasted kombucha was in 2010, at a Whole Foods in San Francisco. As I drank the ice-cold bottle of GT’s Multi-Green, I was surprised by how familiar it was: Its sharpness reminded me of long-fermented Taiwanese fruit vinegars and suan cai, while its funk called to mind the diverse array of ferments, such as furu, tempe, belachan, and doubanjiang, that flavored my ’80s Malaysian childhood.
After I immigrated to Australia in the ’90s, my white friends mocked these ferments as “smelly,” “gross,” and “weird.” But 20 years later, the large refrigerated probiotic beverage section at Whole Foods was dominated by a funky drink, covered with psychedelic labels and buzzwords like “rejuvenate,” “restore,” and “regenerate.” And just as I’ve seen the popularity of kombucha continue to grow, I’ve watched as many of the once-ridiculed ferments of my childhood have been declared not just acceptable, but trendy by white people eager to festishize and commoditize them.

Shake Shack Debuts New Korean-Style Fried Chick'n Sandwich as Part of Korean-Inspired Menu

The Korean-Style Fried Chick'n sandwich features Shake Shack's crispy-fried chicken breast filet covered in a gochujang glaze, topped with toasted sesame seeds, and served with white kimchi slaw on a potato bun. The new sandwich is inspired by Korean fried chicken, which is typically double-fried and brushed with sauce (the most popular sauces at Korean fried chicken restaurants in the US being either a soy garlic sauce or a sweet and spicy sauce, which seems to be what Shake Shack is aiming for). Korean fried chicken is very popular in South Korea and enjoys a decent amount of popularity in certain states here at the US (there's one Korean fried chicken restaurant chain, Bonchon, that has over 100 locations in the US across 21 states).

Shake Shack Is Releasing Korean-style Fried Chicken Sandwiches in the U.S. for a Limited Time

If you have a New Year's resolution to eat more green, this might be the best excuse to break it.
Shake Shack announced two new menu items that have officially hit stores nationwide: a tasty Korean-style fried chicken sandwich and chicken bites.
"Inspired by our teams' work and travels in South Korea and the incredible food scene there, this limited-time chicken sandwich features a spicy-sweet gochujang-glazed crispy chicken breast over our white kimchi slaw and toasted sesame seeds," it says in a statement.
Shake Shack collaborated with Choi's Kimchi Co. in Portland, Oregon to create the slaw made with salted and fermented Napa cabbage, daikon radish, and green onion, which perfectly complements the tangy sauce. As always, the restaurant used fresh, antibiotic-free white meat.
