'); document.getElementById('appDownload').onclick=function () { location.href="http://ndapp.oeeee.com/preindex/?ext_link_jsonpack="+encodeURIComponent('{"id":"BAAFRD000020210728524903","type":"doc","sign":"d2a211d5aec82bd52b37bffc58c73f77"}'); } } })(); 因食品安全问题致歉的杨国福：门店加盟费或贡献两成营收日前南都记者注意到，有消息披露杨国福麻辣烫线下一加盟店存在“员工随后在27日，南都记者注意到，佛山顺德的市场监管部门就对辖区内的杨国福麻辣烫进行突击检查。不过即使享受加盟制带来“不差钱”的红利，但杨国福麻辣烫对加盟门店的食品安全问题管控仍有待提高。南都记者留意到，杨国福麻辣烫在行业中能获得龙头地位以及门店快速扩张，主要还是得益于其加盟制度。透过杨国福麻辣烫微信公众号，南都记者留意到目前杨国福麻辣烫最新的加盟费用情况，其中北上广深一线城市加盟费用为27900元/年、其他地级市及直辖市为23900元/年，而乡镇县级市为19900元/年，另外品牌保证金则是1万至3万不等（解除合作后退还）。不过，这仅是加盟杨国福麻辣烫所需费用的其中一部分。与此同时，对方还表示，在正式开店后，店铺中除新鲜蔬菜外，所有食材以及调料等必须购买和使用该公司提供的产品，但“店面赚取的利润不需要和公司平分”。而针对加盟店中食品安全、卫生问题等方面管控，对方表示“需要自行负责和承担”“公司会定期巡查，发现违规会处罚”等。透过上述提到加盟等规定，南都记者发现，杨国福麻辣烫线下加盟店，实质上相当于该公司的“客户”。巨额加盟费与供货费，不融资也“不差钱” 业界分析认为，实际上对于杨国福麻辣烫等多个采取加盟制的连锁餐饮，品牌授权方的角色更多是扮演供应商的角色，即品牌方的真正盈利点，是对加盟商几乎排他的原材料供应。一名不具名的餐饮从业人士告诉南都记者，与直营门店、且需要翻台率以及人流量支撑现金流的餐饮企业相比，加盟制下的企业对现金流依赖相对较低，只要维持一定的开店频率，即可维持资金运转，且对其营收增长带来正面影响，“当然公司的毛利率和净利润可能也不会太高”。以同样运作模式的企业进行类比，根据南都记者此前报道，对线下门店进行原材料供货的华莱士，其新三板挂牌企业华士食品营收近35亿元，但净利润仅9209万元，毛利率甚至低于4.7%。在门店维持稳定的加盟开业频率，以及排他的供应链下，杨国福麻辣烫也“不差钱”，并未接受过任何机构的投资。南都记者透过天眼查等注意到，自创业以来，杨国福麻辣烫就未进行过任何一轮融资。与之相对的，部分同处麻辣烫赛道的新兴品牌，则是利用资本进行扩张。不过除了“不差钱”外，实际上不接受投资也涉及到相关合规问题，上述餐饮从业人士表示，相关合规主要存在于财税（包括加盟门店营业税、增值税及员工保险等）方面，“另外接受了投资方的钱后，基本会想方设法要求公司加快上市的步伐，以求尽早退出”。加盟制下的食品安全隐忧，已非第一次出事南都记者注意到，杨国福麻辣烫已不是第一次陷入卫生与食品安全问题。另外，南都记者从投诉平台聚投诉中统计注意到，涉及杨国福麻辣烫47条投诉中，有30条与食品安全问题相关，其中包括吃出头发、昆虫、铁丝等是消费者投诉最多的问题。屡次出现食品安全问题，也意味着杨国福麻辣烫对于加盟门店的管控能力有待提高。据南都记者此前多次报道，业内人士认为，在房租、食材购入以及人工成本等压力下，加盟商普遍是以“省”的方式获得利润，这也导致相关食安问题频出，与此同时，由于品牌方在食品安全巡查方面执行力度弱等，因此导致线下加盟门店出现较多食品安全问题。当然，针对解决问题等方式，有行业人士曾建议，品牌方可以向加盟门店派驻店长等，从而直接对加盟店进行管理。对于杨国福麻辣烫未来是否再发生食品安全问题，且未来将如何发展，南都记者将持续关注。
