While Wales celebrated the reopening of its pubs and restaurants with outdoor service this past week, chef Shaun Hill must hold out until May, when indoor dining is permitted, to welcome customers back to his Michelin-starred Walnut Tree in Abergavenny. Ever optimistic, Hill will be using his free time wisely by planning trips to local restaurants, as well as indulging in freshly baked bread and a chunk of Slack-ma-Girdle cheese.
