150-Year-Old French Bakery Is Selling Vegan Pastries in Venice, CA for the Holidays

This month, 150-year-old French pâtisserie chain Ladurée is selling its vegan pastries, macarons, and hot teas out of vegan eatery Plant Food + Wine in Venice, CA. The eatery, owned by vegan chef and entrepreneur Matthew Kenney, opened its doors as a pop-up retail shop as a way to continue to serve the community during the COVID-19 pandemic. There, patrons can shop for the Ladurée desserts Kenney helped create, along with home scents, key rings and bags, and a limited-edition Ladurée Christmas box.
Ladurée goes vegan
Last year, Ladurée partnered with Kenney to revamp its Beverly Hills location to be fully vegan. The bakery now serves vegan macarons in a variety of flavors, including Vanilla, Pistachio, Chocolate, Rose, Salted Caramel, and Lemon, along with croissants, palmiers, meringue-topped tartlets, and other classic French pastries. It also offers a vegan menu with dishes such as whipped cream-topped French toast, egg-free omelettes, and Croque-Monsieur sandwiches. Earlier this year, Ladurée added vegan macarons to its locations in Paris, with plans to debut additional vegan options to its roughly 80 locations worldwide.

Domino's Launches Meatless "Unthinkable Pizza" in India

This week, international chain Domino’s added the meatless Unthinkable Pizza to its menu at locations in Mumbai, Delhi, and Bangalore. The new pizza is topped with plant-based chicken, making Domino’s the first quick-service restaurant to add plant-based protein to its menu in India. “We are delighted to launch India’s first plant protein based product, The Unthinkable Pizza,” Pratik Pota, CEO of Jubilant FoodWorks Ltd—which operates Domino’s in the region—said. “This innovative and 100 percent vegetarian product will allow Indian consumers to experience the plant-protein wave sweeping across the world. Domino’s has always brought pioneering innovations to the Indian market, and we are happy to once again be the first to bring this trend to India.”

Vegan Molten Lava Cakes


Pair this ultra-chocolaty baked good, from the
Baked With Love cookbook, with a huge scoop of vanilla ice cream, cherry compote, and extra chocolate drizzle. 
What you need:
½ cup plus 1 tablespoon cassava flour, divided
⅔ cup plus ½ cup unsweetened chocolate chips, divided
½ cup unsweetened applesauce, room temperature
½ cup coconut sugar
Fresh raspberries, for garnish
What you do:
Preheat oven to 425 degrees. Melt 1 tablespoon butter and use to grease four 5.4-ounce ramekins, then dust ramekins with 1 tablespoon of cassava flour.
In a microwave-safe bowl, heat remaining ½ cup butter until melted and hot to touch. Add ⅔ cup of chocolate chips and stir until melted. Set aside.

How to Make Vegan Hot Cocoa Bombs


It starts with chocolate
Let’s get the hard part over with by creating the chocolate shell that will contain your cocoa mix and marshmallows. This involves tempering chocolate—a culinary term for the process of melting and cooling chocolate so that it eventually hardens into a glossy finish with a crisp snap. Tempering also stabilizes the chocolate and makes it easier to work with. This tutorial provides a thorough step-by-step to tempering. Alternatively, you could throw caution to the wind and melt the chocolate over a double broiler, but do so at your own risk. 
Once your chocolate is tempered (or melted), use a food-grade brush to evenly line the inside of a silicone dome mold with the chocolate. Allow this to harden in the fridge—up to 10 minutes. Once set, ever so carefully pop out your chocolate molds and fill half with about one tablespoon each of cocoa mix and vegan mini marshmallows (try Dandies).

Veganuary Founder Launches Vegan Fried Chicken Brand

New vegan fried chicken brand VFC recently launched across the United Kingdom. The new brand was created by businessman Matthew Glover—who founded vegan campaign Veganuary with his wife Jane Land in 2014—alongside Source restaurant owner Adam Lyons as a form of protest of the animal agriculture industry. Initially, the duo is launching VFC with three seitan-based and soy-free products (available in original or spicy flavors) through the brand’s website: Bites & Fries, with a tangy barbecue sauce, VFC Bites, and VFC Fillets. “I am a businessman turned activist and VFC is very much a marriage of the two,” Glover said. “There are many ways to dismantle unjust systems, and we intend VFC to be part of the movement that puts an end to factory farming for good.”

Chef Creates Violife Vegan Cheese Chalet for the Holidays and You Can, Too

Matthew Ravenscroft, Chef de Cuisine at Toronto-based Rosalinda Restaurant, created a vegan cheese chalet as part of Violife Foods’ 2020 campaign #SantaButVegan. Inspired by this year’s holiday trend of creating charcuterie gingerbread houses and other creative snacks for Santa, Ravenscroft constructed a vegan house using five of Violife’s cheeses. The chalet was built to support the brand’s effort of encouraging Canadians to make vegan snacks for Santa—who in 2020, Violife says, “is more compassionate and more planet-conscious than ever, and he values sustainability as part of his joy-making impact.” 
Building the chalet
To make the chalet, Ravenscroft used Violife creamy original spread as “mortar” to hold the roof and walls together and to create icicles on the roofline. The chef made the front door from Violife smoked provolone and grated Violife parmesan-style wedge to create snow. For the snow person outside, Ravenscroft used a combination of Violife feta-style and Violife creamy original. Other decorations include a broccolini shrub, red pepper sled, decorative jewels (and a door knob) made from pomegranate seeds, carrot cubes as lights, trees made from rosemary sprigs and mushroom caps, kumquats as windows, and circular crackers as roof shingles. The roof of the chalet is made from a grilled cheese sandwich filled with roasted apples and Violife’s mature cheese-style slices and the smoked-flavoured provolone style slices.

Jane Goodall, Ricky Gervais, Bryan Adams, and 100 Other Celebrities Sign Open Letter Urging Public to Go Vegan in January

A group of more than 100 international celebrities, athletes, activists, politicians, and business leaders have signed an open letter urging everyone to go vegan in January and beyond. Published by global campaign Veganuary, the letter includes signatories such as actors Edie Falco, Alan Cumming, and Evanna Lynch; comedians Ricky Gervais, Tig Notaro, and John Bishop; athletes Dotsie Bausch (Olympic cyclist), Patrik Baboumian (strongman), and Kuntal Joisher (mountaineer); environmental activists and organizations Jane Goodall, Chris Packham, Greenpeace UK, and Friends of the Earth; musicians Paul McCartney, Chrissie Hynde, and Bryan Adams; and many others. 
“Trashing the planet does none of us any good, as the coronavirus pandemic shows all too clearly,” Packham, letter signatory and Veganuary Ambassador, said. “But we can emerge from this stronger and wiser, with a renewed commitment to protecting the environment, its inhabitants and our own futures. Being vegan is a great way to support the natural world and to live sustainably.”

Vegan Shortbread Millionaire Bars


1 cup vegan dark chocolate chips
1/3 cup coconut oil, melted
1 batch caramel sauce
What you do:
For the caramel sauce, in a large pot over high heat, bring coconut cream to a boil. Reduce heat to medium and add coconut sugar, vegan butter, and vanilla extract. Stir until coconut sugar has dissolved. Reduce heat to low and continue to stir for 10 minutes, until mixture begins to thicken.
Remove pot from heat and allow sauce to cool for 5 minutes before pouring into an airtight container. Let cool completely before placing in refrigerator to chill for 2 hours. 
For the bars, line an 8-inch square baking pan with parchment paper.
