Hospitality sector in store for 'phenomenal reawakening' – Richard Corrigan


 
Celebrity chef Richard Corrigan said the hospitality industry in Ireland is in store for “a phenomenal reawakening” when the sector reopens this summer.
Mr Corrigan was speaking after revealing that business at his London restaurant, Bentley’s in Piccadilly, has been “fantastic” since it started serving customers on its terrace since Monday, April 12th, following the easing of Covid-19 restrictions in England.
“I have to say that before we opened, I was shaking with nerves – genuinely, I didn’t know how it was going to go, ” the Meath-born chef said.
“We were such a long time closed, you start to lose confidence – it does hammer you but I have to say the numbers we have had since we have reopened have been phenomenal.” ....

Perfect pancakes
To make about eight pancakes, sift 125g plain flour into a large mixing bowl with a pinch of salt. Make a well in the centre, and add one whole egg and another yolk. Mix 225ml whole or semi-skimmed milk with 2 tbsp water, then pour a little into the egg and beat together. ....

In a year when chefs and restaurant folk were challenged more than ever before, Gráinne O’Keefe proved that a knack for quick thinking is just as important as being able to cook a perfect steak (although she does that too… her signature 80-day whiskey-aged côte de boeuf with chimichurri and smoked bone marrow at Clanbrassil House, Dublin 8, is a thing of beauty, and make sure to order the hash brown chips and pickled onion mayonnaise on the side while you’re at it). As culinary director of BuJo, in Sandymount, she was first out of the traps with a burger kit for home cooks and got nationwide delivery up and running before other restaurants had figured out their packaging. (It’s still right up there amongst the very best of the meal kits.) Smart collaborations throughout the year have kept BuJo relevant and in touch with their customers, and new branches are on the cards for 2021.
