i really felt that, you know, the country exploded over this issue, and the whole argument stereotyped gay people but it also stereotyped people in the military, too, as bigots, as you know, behind the times, and i felt that it was just deeper and richer than that but none of us could know about it because nobody was ayou loed to talk about it, so i realized as an actor that i could be a voice for people who weren t allowed to speak for themselves and i went around the country interviewing people to find stories to show a community that was hidden from all of us, but also to show people that break down stereotypes. how did you get them to talk? because they re told, don t ask, don t tell, and right. for those buying into that, how did you get them to come forward and speak? it was very, very dangerous for them. you know, if people knew that they were talking to me, they could have been kicked out, they could lose their benefits and everything, but i think what happens is, when you push people down and push people down, it becomes like a volcano, and human nature, you need to talk. you need an outlet. you need to tell your story, and i was able to, i don t know, they trusted me. you know, what happened was, i have a lot of friends in new york, from all over the country. right. and they know somebody who went to high school with who turns out to be gay and they were dating somebody at the military base say back in iowa. so word of mouth spread. it had to be secret and people in the military were paranoid i was being followed. what was surprising you conducting the interviews? i think what was mostly surprising is how paranoid people were. i met somebody at a cafe i was sitting along the windough and h he said what are you doing here? i can t be seen talking here so i had to go to the back. women told me someone they knew in the military had threatened to take her child away if she didn t turn other people in. oh, my. wow. a lot of horror stories. a lot of horror stories. and we should mention the movie opens today but more than 13,000 service members of course have lost their jobs as a result of don t ask, don t tell. what do you think now happens in this new era, where this ban has been lifted? i think in a way nothing is going to happen, because the straight soldiers have been serving with gay soldiers forever and so it s not going to be a big thing, but for not a big seat change in. but for individuals, they won t have to lock their computer when they leave their desk. they won t have to worry about is somebody going to find this letter to the boyfriend or the girlfriend that reveals something about them. and not lose their jobs because so many did. and their benefits. marc wolf, thanks so much for bringing this to light. don t ask, don t tell opens today in theaters. thank you. coming up next a hardy fall people from bobby flay. first, this is today on nbc. this morning on today s kitchen, what s for dinner? a hardy meal from famed bobby flay. his brand new cookbook, it s been out for two years now. bobby flay s bar american good to see. this is a slow roasting pork. we re making a couple of dishes. this is my restaurant in our neighborhood, you guys always show up for lunch and we love having you. yes. bar american is a celebration of america, plated in a european braserrie style. yes. we re going to make a version of a french onion soup and a rack of pork. okay. we re going to use vidalia onions from georgia. much sweeter. and american onion and if you can t find vidalia, the most monday, walla walla from washington state and also maui. you can start with a lot and you get a little. you let them caramelize in their own natural juices and sugar and put a little bit of sherry and who knows, bourbon. whatever you like. anything like that. and let that cook with a little bit of chicken stock, and a touch of flour, and then the onions and the chicken stock get this beautiful flavor so fresh garlic in there and it starts to look like what you know is french onion soup. only it s thicker. i like to use some briosh and cheddar. we have it under the broil, gets bubbly and this is what people love about french onion soup or in this case the american version, and parsley pesto on top and serve it, fire away. i love it. now let s go with mr. pork. exactly. a lot of times people say i took a pork chop, put it on the grill or saute pan and it was a little tough. what i tell people to do if you have the time, and it doesn t take a long time, 35, 40 minutes, cook the entire rack. this is a pretty big rack, if you want if you wanted to get half of this, that would be totally fine. stay with me. i m all the way with you. we start to sear it in the pan like this. um-hum. we put it into the pan. so you brown it on both sides? exactly. i like to take a glaze, two mustards, dijon, whole grain and molasses. this will caramelize on the outside of the pork, put this in the oven 35 minutes, put a thermometer in there, 155 degrees, let it rest for about 15 minutes and you can slice away. what s the sauce we have? we ll make the sauce right in the pan here quickly, a little bit of jack daniels. i call this the sour sauce. i call this the joe michaels sauce, the director. onion and chicken stock and bring this to the boil, reduce and the beautiful thick sauce down here. wow. what was that all about? are you going to send somebody else in? we re like lenny and squiggy. i like the 9:00 hour, gets more ugly. smells so good. wow. double apple butter so apples, butter, cinnamon, garlic and onions and puree it in the food processor and sour mash sauce. this smells yum. can we start eating now?
