Fried chicken, the meal of choice for spring picnics, is popping up on multiple San Diego restaurant menus this month in sandwiches and other variations. Here’s the latest:
Junya’s Crispy Karaage: The latest culinary creation from RakiRaki Ramen owner/chef Junya Watanabe is his twist on the Japanese style of fried chicken known as karaage. Antibiotic-free chicken is marinated for 48 hours in fermented soy sauce and 12 spices, garlic and ginger, then coated with 22 spices, double-fried and served with house Japanese (kewpie) mayonnaise. The karaage is available in regular and spicy varieties in jumbo boxes, in sliders, with fries, in ramen or curry and in a bento box, priced from $11.40 to $25. The new JCK menu, introduced last week, is available at the RakiRaki location at 4646 Convoy St., Suite 102-A in Kearny Mesa. It’s also available for takeout. Visit rakirakiramen.com.

Services available for those experiencing homelessness as frigid temperatures approach

SPOKANE, Wash. — Frigid temperatures are in the forecast and the City of Spokane would like those experiencing homelessness to know that services are available to them.
The regional shelter system is adjusting by flexing operations and supplementing with temporary housing options to account for COVID restrictions. A release from the city said the system will create capacity within the shelter system by prioritizing hotel and motel stays for those at the highest risk of COVID.
Shelter providers are assessing their specific populations to coordinate who would be the best candidates for congregate space and hotel options. Those seeing assistance should reach out to a service provider, who will work directly with hotel operators for arrangements.

SPOKANE, Wash. — The City of Spokane announced Tuesday it's adding extra capacity to homeless shelters ahead of an expected cold snap in the Inland Northwest. 
Temperatures are expected to be below freezing across the Inland Northwest this week. Spokane is expected to see the coldest temperatures since Oct. 25 which had a low temperature of 13 degrees. The forecasted low temperatures for Thursday and Friday are in the single digits.

SPOKANE, Wash. — As Washington continues to navigate COVID vaccine rollout, it can be hard to keep up. We’re here to make things easier, so when the time comes for you to get the shot, figuring out where to get it is one less thing on your plate.
First, you need to figure out if you qualify for the vaccine — providers are going in a phased order. Currently, the state is prioritizing those 65 and older (or 50 and older if you live in a multigenerational household), as well as educators and child care workers in Washington.

The Carlsbad City Council met Tuesday for a presentation on regional COVID-19 vaccination coordination. The council approved the Biotech and Beyond building as a regional point of distribution for vaccination and testing programs, coordinated by emergency services agencies. The council heard a presentation on the city’s Clean Energy Alliance power supply product offerings and agreed to offer several options, with the ability for customers to opt out and return to San Diego Gas & Electric if they preferred. Council member Keith Blackburn was approved as mayor pro tempore. Several appointments were approved: Jengi Martinez, Michael Luna and Michael Sebahar, Parks & Recreation Commission; Geoff Gray, Carlsbad Golf Lodging Business Improvement District Advisory Board.

ince the city of Spokane was awarded a $2.7 million grant this summer for a young adult shelter, city and regional leaders have agreed on one thing: The shelter is urgently needed.
What they can't agree on is where to put it. That's frustrated Fawn Schott, the president and CEO of the local Volunteers of America, the nonprofit that would operate the shelter.
"This is NIMBY at its core," Schott says. "Nobody wants a shelter in their backyard."

How Spokane County has spent its $91 million in COVID-19 relief funding


The Spokane Regional Health District has received about $8 million in CARES funding distributed by the county.

s COVID-19 made its first wave across the country, and schools and businesses shut down, Congress passed the CARES Act this spring in an effort to dampen the economic fallout of the pandemic.
Spokane County received about $91 million from the $2.2 trillion stimulus bill, signed by President Donald Trump on March 27. That meant that three Spokane County commissioners — Republicans Al French, Josh Kerns and Mary Kuney — got to decide how to dole out money to affected businesses, government agencies and nonprofits. The money has to be spent by the end of this year.
