国宴全是素食
在印度虽然并不是说所有素食者身份必然高，但身份高的人却往往都是素食者。相应的，越是地位较低的人群中素食者的比例也越低，“肉食者鄙”这句话在印度有着现实的社会意义。印度国宴上基本都是素食。2014年习近平主席到访莫迪的家乡古吉拉特邦时，莫迪为表欢迎准备了100多道当地美味，全部是素食。2020年初特朗普访问印度的时候也是一样，据印度媒体报道，特朗普抵达印度的第一天，在国宴上对着满桌子素菜几乎没怎么吃。
《环球时报》记者在印度参加国际会议时基本都是吃自助餐，发现自助餐不像其他地方以冷、热或者菜品、主食这么划分区域，而是常常分为素食区、非素食区来摆放，素食区印度人多，非素食区外国人多。有一次，《环球时报》记者拜访印度理工学院校长时与印方共进午餐，全部是用新鲜蔬菜等当时当令的食材烹饪的素食，可谓新鲜又美味，而且并不像印度一般餐厅口味那么重，这一餐可以说完全颠覆了记者对印餐尽是又辣又咸的菜糊糊的刻板印象。
还有一次记者参加在中餐馆组织的聚餐，其中一位小客人是个印度孩子，看名字他应该是高种姓，结果面对一桌子的中式美味，小朋友最后只吃了一根生黄瓜。在印度，身份地位的高低与种姓的高低虽说不是完全一致，但也可以说是息息相关。印度日常生活中一般不便问别人的种姓，但人们可以通过姓名、肤色、是否素食等来判断对方的种姓。印度电影《小萝莉的猴神大叔》中有个情节就很能说明印度人是如何通过饮食来判断种姓的，主人公一开始以为漂亮可爱的小女孩是高种姓，后来发现她爱吃鸡腿就判定她应该是低种姓……
素食、非素食之别处处可见
印度的肉食不叫肉食而是叫非素食，足见素食是主流，肉食是非主流，其地位差异从名称可见一斑。在印度，到处都能看出素食和非素食的区别，所有带包装的食品都强制性地标明其成分为素食还是非素食，素食的标志是绿色圆点，非素食的标志是棕色圆点。除了食品，有些入口的用品——比如牙膏，也必须标识是否素食。一些食品添加剂或食品加工中用到的辅料也必须标识清楚。在这方面印度法律规定是非常严格的，如果因为标识错误或标识不清而造成“误食”的情况，轻则打官司、重则可能会引发宗教冲突。
印度人对素食、非素食的划分与我们一般的理解不同，并不是说非肉食的就是素食。比如说，鸡蛋和牛奶算是素食还是非素食呢？印度的答案是，牛奶是素食，鸡蛋是非素食。印度对素食和非素食的判断标准可以追溯到古老的吠陀时期婆罗门教、耆那教和佛教等宗教中的“非暴力”思想。印度人认为，母牛在满足了小牛的哺乳需求后是乐于将牛奶奉献给人类食用的，所以牛奶可归入素食。而母鸡却是不愿意将鸡蛋贡献给人类当食物的，所以鸡蛋要算非素食。
乘坐印度航班的时候，空乘人员在分发餐食的时候都会询问乘客是要素食还是非素食，许多首次乘坐印度航班的外国乘客不知什么意思。而这种情况下，印度有的乘客也会有内心的挣扎，一些人即使自己在家时吃肉，在众目睽睽之下为了面子、为了更高的社会认同感也会坚决地回答：请给我素食。这种面对食物时产生的道德窘境，也许是印度特有的现象。在印度网络论坛上有关素食人口的话题讨论中，有印度网友就留言认为，如果就印度的素食人口比例搞两场投票调研，一场记名投票、一场不记名投票，其结果可能会大相径庭。
素食吃出肉食的味道
《环球时报》记者曾到访过印度的一些圣城，比如瓦拉纳西、瑞诗凯诗等，在这些宗教圣地很难寻觅到肉食，能找到个提供蛋炒饭的饭店都算是好运气了。记得当初去艾哈迈达巴德的时候，记者好不容易找到了一家麦当劳，兴冲冲进去点餐的时候却发现只提供素汉堡。但记者同时也发现，在只能吃印餐的环境中并不会特别向往肉食，这与印餐的烹调特点有关系，印餐中的许多素食从烹饪方式到营养方面跟我们的肉食相比并不逊色。有些印度的素食甚至可以说是高油、高盐、高糖的，这与我们对中餐素食清淡的印象完全不同。
提到印餐，大多数人首先想到的肯定是咖喱。而且许多人肯定跟记者刚到印度的时候一样，想当然地认为咖喱是调味品，那一定是跟中餐的胡椒面差不多在菜品出锅前撒进去就行。其实不然，咖喱粉（印度一般叫“玛萨拉”）是需要用油烹制的。我们可以从印度菜的灵魂——酱料的制作过程中了解到一棵蔬菜是如何变成高油、高盐的菜糊糊的。首先在印式高压锅中放宽油，加入切碎的姜、蒜、洋葱末和辣椒，加盐焖炒几分钟后加咖喱粉和切好的西红柿（或菠菜）、加酸奶、再加盐，炒烂后再用高压锅焖10分钟就可以出锅了。这种酱料（或者说菜糊糊）可以放置较长时间也不会变质，在冰箱中可以储存几个月，非常适合印度的炎热天气。用水煮蔬菜再配上这种酱料，再加些盐就能做出纯正印度口味的菜糊糊啦。
印餐中还有一款常见的素食叫古拉博贾木，就是用糖水和面搓成小丸子在油里炸，之后再放在糖水里煮，上桌时还要再淋上一些糖浆。所以印度不少素食者都是胖子。
