We ll respond to our readers’ requests regarding recipes in four parts starting this week.
A 75-year-old resident of Tokyo’s Itabashi Ward wrote to us requesting a recipe for “Milanese-style fried tenderloin cutlet.”
She said she came to like it after having it for lunch at an Italian restaurant and wished to make it herself.
In Italy, the usual ingredient for the dish is veal, which is prepared thin, and as large as or larger than the plate.
After discussing with chef Kuniaki Arima ways to make a recipe that would suit home cooking in Japan, we chose to make it with pork tenderloin, which, like veal, is tender and has little fat.

Japan s National Research Institute for Earth Science and Disaster Resilience (NIED) reported a magnitude 4.1 quake in Japan near Rumoi, Rumoi-shi, Hokkaido, only 13 minutes ago. The earthquake hit after midnight on Thursday 27 May 2021 at 12:13 am local time at an intermediate to considerable depth of 254.3 km. The exact magnitude, epicenter, and depth of the quake might be revised within the next few hours or minutes as seismologists review data and refine their calculations, or as other agencies issue their report.
According to preliminary calculations, we do not expect that the quake was felt by many people and did not cause any damage. In Rumoi (pop. 26,500, 66 km away), Nayoro (pop. 26,500, 69 km away), Makubetsu (pop. 25,900, 95 km away), Fukagawa (pop. 26,200, 97 km away), and Wakkanai (pop. 41,600, 98 km away), the quake was probably not felt.

ABC-7 reports that popular Sherman Oaks bar the Woodman was the scene of a drive-by shooting on Saturday evening/Sunday morning. The incident began with a verbal altercation that became physical around 2 a.m. Some time later, shots were fired from a vehicle, with return fire aimed toward the car. Two people were taken to a hospital for treatment with a third taken by friends elsewhere for non-medical treatment. Police said the injuries were not life threatening. The Woodman has been open since 2014 and serves gastropub fare.

Dressing, the partner to salads, caps our series that took a close look at the flavors of popular dishes.
To produce a mild dressing that still has some bite, we ll add to the basic combination of one part vinegar to two to three parts oil.
Unlike commercially available dressings, we ll go easy on the salt and aim for a dressing that highlights the main ingredients. You always can add more salt later.
We recommend using any colorful seasonal fruits and vegetables you have left in the kitchen. In April, the “bankan” citruses are a good choice. Though our recipe uses “hassaku” orange, “amanatsu” or “buntan” will also create a sweet and refreshing flavor simply by mixing in the citruses crushed fruity flesh.

People who enjoy eggs and pasta will love this week s recipe for spaghetti carbonara, which balances the rich sauce created by adding cheese or cream to eggs, thick noodles matching the sauce, and the black pepper that spices it all up, to create the popular flavor.
Carbonara means “charcoal worker style,” named so according to one theory due to the coarsely grated black pepper used in it that resembles powdered charcoal.
The ingredients we ll use follow the Italian recipe. But this week’s recipe offered by Kuniaki Arima, the chef who supervised the cooking aspect, adopts the “kama-tama udon” style (boiled udon noodles fresh from the pot mixed with raw eggs). The sauce and pasta are mixed in a bowl and the hot noodles naturally half-cook the egg. The dish is foolproof.

Despite its close association with Japanese cuisine, did you know that tofu goes well with olive oil?
In Italy, people enjoy ricotta cheese, which resembles tofu in its look and texture, with olive oil. This is what inspired us to come up with this week’s Western-style, tofu-mix dish.
When making “shira-ae” (literally “dressed in white”), we will add flavorful seasonings and ingredients--and, in the case of Japanese cuisine, sesame seed and miso--to light-tasting tofu.
Parmesan cheese adds saltiness and richness, while garlic and lemon offer the aroma. They harmonize with the sweetness and subtle bitterness of the vegetables and do not lessen the flavor of meat.
