Food technology is no longer the preserve of lab-bound boffins. These days innovators are taking products to market themselves – and cashing in
It’s hard to pin down the precise moment when food tech went from the concern of a few product specialists in lab coats to a mainstream source of excitement.
It could’ve been way back in April 2003, when scientists first mapped the human genome, paving the way for personalised DNA diet kits. Or 2011, when US scientist Patrick Brown founded Impossible Foods, crafting meatless patties out of modified soy and heme. Perhaps even as recently as December 2020, when regulators in Singapore green-lit lab-grown chicken, built from cells and bathed in a growth serum.

The former general manager of HP Indigo will be an active chairman of the Israeli startup Redefine Meat, which specializes in printing of protein substitutes. In an interview, he admitted he eats real meat, but still dreams of creating a vegetarian steak
The startup Redefine Meat announced this week that Alon Bar-Shany, the former general manager of HP Indigo, has been named the company’s active chairman. 
Bar-Shany left HP Indigo last June after 25 years with the company, including 16 as general manager. Now, he is switching from printing color on paper to the three-dimensional printing of protein substitutes.

A new seed fund for European agrifood-tech startups has been unveiled by PeakBridge, the agrifood-tech venture capital fund manager investing globally, and EIT Food, the world's largest Agrifood Innovation Ecosystem supported by the European Institute of Innovation and Technology (EIT).
The FoodSparks fund will invest in pan-European seed and early-stage startups to offer access to strategic capital and support with scaling up, thereby working towards innovative solutions to some of the world’s most pressing problems in food production, supply and sustainability.

From Beyond Meat in Los Angeles to Impossible Foods in Silicon Valley, California could well be called the land of fake meat. Halfway across the globe, however, another hotbed of food tech innovation is emerging.
For such a small country, Israel has a disproportionately high number of alternative meat startups – over 50, according to Nir Goldstein, the managing director of the Good Food Institute Israel. This should come as no surprise: Israel’s startup ecosystem frequently ranks among the best in the world. But there is ample support for alt-meat innovation in particular. “The market is so hot that we don’t know of any alt-protein startup that hasn’t been able to raise seed funding,” says Goldstein. In addition, the Israeli government has funded two tech incubators, The Kitchen and Fresh Start, to provide companies with equity financing, business mentoring and more.
