Patru Dumitru is a mushroom microgreen wunderkind. If that wasnât a thing, it is now. After dropping out from a year of business school at UCCS, he started a hydroponics business at age 19 in his parentsâ garage, selling a rig he designed called the âHerbaHammock.â Sold for $125, it could grow 30 lettuce heads monthly. He wanted to empower people living in apartments or places without backyards to grow their own food, but after a couple years of giving it a go at farmers markets and failing to make much money, he embarked on a new journey. A local chef had asked him one day if he grew microgreens, so he looked into it, and became interested.Â

OPINION: How easily happy memories come flooding back By Nicky Marr Published: 18:30, 07 February 2021 Get the Inverness Courier sent to your inbox every week and swipe through an exact replica of the day's newspaper By Nicky Marr Sitting at the side of another frozen loch last weekend, wrapped in layers of thermals, we were joined by a robin. My sister and I had been dunking ourselves into icy water again, and this was our post-ice-bath treat, a flask of hot chocolate, spiked with a shot of coffee for added flavour, and a huge slab of freshly baked gingerbread. It was her turn to bring cake, and because sheâd taken it from the oven just minutes before leaving the house, it was not cut into neat slices, but was an inelegant chunk, wrapped in greaseproof paper and foil. We broke bits off, greedily. The crumbs must have been what attracted the robin.
Pete Moreno, a Colorado Springs native and graduate of Wasson High School, has made quite a name for himself in our culinary community. After 16 years as executive chef at MacKenzie’s Chop House, he joined the popular steakhouse Prime25 as executive chef in July. While it might not have been the best time to start anew in the restaurant business due to the pandemic, Prime25’s loyal customers have kept Moreno a busy chef. Working in upscale restaurants isn’t new to Moreno. But it’s impressive considering his training has only been in the kitchens where he has been employed, and not culinary school.
