Dairy-free cheeses featuring novel fermented microbial protein to launch by year end, says Superbrewed Food
Dairy-free cheeses featuring a novel bacterial protein could hit the market by the end of the year, adding an intriguing new dimension to the burgeoning dairy-alternative space, says microbial fermentation specialist Superbrewed Food (formerly known as White Dog Labs).
Grown in fermentation tanks at record speed using a fraction of the inputs required to grow traditional food crops, or raise, feed and slaughter animals, Superbrewed Food’s fermented microbial protein (brand name TBD) will initially hit the market in branded retail products such as mozzarella, block cheddar, and cream cheese, said co-founder Dr Bryan Tracy.

Oishii closes $50m Series A funding, sees itself as the ‘Tesla’ of strawberry vertical farming
Oishii, a vertical farm growing Japanese omakase strawberries with 2-3x the sweetness of conventional US-grown strawberries, has closed $50m in Series A funding led by SPARX Group to scale its business for mass market consumption.
The $50m investment from SPARX Group’s Mirai Creation Fund II – a fund established by Toyota Motor Corporation, Sumitomo Mitsui Banking Corporation, and SPARX – will be put towards expanding Oishii’s proprietary vertical farming technology which can grow strawberries indoors at a commercial scale.
The company will also use the capital to grow and produce other fruits and vegetables.

RightRice has launched its newest innovation in the rice category, RightRice Risotto, a veggie-based product line that is dairy-free using just water while achieving the same level of creaminess the well-known rice dish is known for (in under 15 minutes), says the company.
Keith Belling, founder of
RightRice​​, says the high-level goal for the brand has always been to reimagine the rice aisle and bring to market nutritious plant-based main meal solutions that deliver on taste and convenience for consumers.

 "The challenge with some other prebiotic fibers such as inulin ​[chicory root fiber]
 is that you need 5g to get a prebiotic effect, but if you take 7g you may get a stomachache ​[although suppliers have
 so there’s a narrow therapeutic window, whereas we have a really wide one.”​
On a more practical level, Arrabina’s low viscosity means it will not gel or impact texture when added as a supplement to protein powders or as a fiber boost for nutrition bars, baked goods, and drinks, he said.
